I’ve been a s’mores fan my whole life and a popcorn lover for nearly as long, so when this recipe turned up in the WW App I didn’t hesitate for a second. The idea of combining the two felt almost too good to be true — and then I made it and it actually was that good.

The technique is clever: warm popcorn gets spritzed with cooking spray (which helps everything stick), then dusted with a mixture of powdered sugar and cocoa powder through a fine sieve. The warm corn picks up the coating beautifully. Then you toss in mini marshmallows and crumbled chocolate graham crackers, and suddenly you’re eating something that tastes like a campfire dessert in a bowl, with no campfire required.

It comes together in about 8 minutes. I make this when I want something sweet in the evening and don’t want to think too hard about it.

  • Popcorn kernels (2 tablespoons) — popped fresh right before assembling so the heat helps the coating stick. You can pop them in a silicone microwave popcorn popper (affiliate link), a paper bag folded closed (microwave (affiliate link) on high until popping slows, about 2½–3 minutes), or an air popper. Yield is roughly 4 cups of popped corn for 2 servings.
  • Cooking spray — the secret step. Spritz the warm popcorn and toss before adding the cocoa mixture so the powder actually adheres instead of falling to the bottom of the bowl. Don’t skip this.
  • Confectioners’ sugar — fine powdered sugar dissolves into the coating much better than granulated. Sifted through a fine strainer (affiliate link) over the popcorn for even distribution.
  • Unsweetened cocoa powder (1 teaspoon) — gives the chocolate s’mores flavor. Use a good-quality cocoa for the best result.
  • Mini marshmallows — stirred in at the end. They soften slightly against the warm popcorn, which is part of what makes this feel indulgent. Full-size marshmallows cut into pieces work in a pinch.
  • Chocolate graham crackers, coarsely crumbled — chocolate grahams add an extra layer of s’mores flavor. Regular honey graham crackers work just as well if that’s what you have — the flavor profile shifts slightly but it’s still delicious.

How to Make Low Fat S’mores Popcorn

Step 1: Gather your ingredients.

Step 2: Microwave (affiliate link) popcorn and place in a medium bowl.

Tips for Success

  • Serve it warm. The marshmallows soften slightly against warm popcorn and the whole thing tastes best right after assembling. This is not a make-ahead snack.
  • Sift the cocoa mixture. It only takes a second and makes a real difference — unsifted cocoa tends to clump instead of coating evenly.
  • Use a large bowl. You’ll need room to toss everything without the cocoa-sugar mixture flying everywhere.
  • Double it easily. The recipe scales up perfectly for a larger crowd. Two batches in a large bowl works well for movie night.

Storing

This popcorn is best eaten right away. Once assembled, the marshmallows start to soften and the graham crackers lose their crunch fairly quickly. If you have leftover plain coated popcorn (before the mix-ins), it keeps in an airtight container for a day, but add the marshmallows and grahams just before serving.

Ingredients 

  • Cooking Spray
  • 2 tablespoons popcorn kernels
  • 2 teaspoons confectioner's sugar
  • 1 teaspoon unsweetened cocoa powder
  • 10 mini marshmallows
  • 2 squares chocolate graham crackers, coarsely crumbled (1/2 sheet)

Instructions 

  • Pop popcorn kernels in a microwave popcorn popper (affiliate link) as directed on the package. Or place the popcorn in a paper bag. Fold over the edge of the bag to close. Microwave on High until the popping stops, 2-½ to 3 minutes. Remove popcorn from microwave and uncover popper, or open bag to allow steam to escape. You could also pop the corn with an air popper if you prefer.
  • Place the popcorn in a medium bowl. Coat the popcorn with cooking spray, tossing to coat all pieces.
  • Place the sugar and cocoa in a fine sieve or strainer (affiliate link) and shake to dust the mixture over the popcorn; toss gently to coat.
  • Stir in marshmallows and graham cracker pieces.

Can I use microwave popcorn bags instead of kernels? You can, but watch the Points — most microwave popcorn bags contain added oil and salt that will change the calorie and Points count. If you go this route, use a plain, light, or “simply salted” variety and enter your specific brand in the WW app to get an accurate Points value.

Do I have to use chocolate graham crackers? No — regular honey graham crackers work great and are easier to find. The chocolate version adds an extra layer of s’mores flavor, but either way you get that satisfying graham crunch. Cinnamon grahams are also a fun variation.

Can I add more marshmallows? You can, just track the additional Points. Mini marshmallows have about 22 calories per 10 pieces, so a few extra won’t dramatically change the count, but it adds up if you go overboard.

Can I make this ahead of time? Not really — it’s best assembled and eaten right away. The popcorn loses its crunch once the marshmallows and coating settle in. Plan on making it just before you’re ready to eat it.
