WW Recipe of the Day: Sugar-Free Almond Apple Cookies
When I first spotted these cookies on PowerHungry.com I new I was looking at winning recipe, perfect for small-batch bakers and Weight Watchers alike.
These easy almond apple cookies have only 3 ingredients and mix together in minutes. The recipe makes a nice small batch of 12 cookies—perfect for small families or anyone cooking for one or two.
A nice lunchbox or after school snack, these cookies bake up soft and cake-like in less than 30 minutes with no added sugar. They are vegan, Paleo-friendly, dairy-free, grain-free, oil-free and gluten-free.
Growing up in Connecticut, every fall my town had an Apple Harvest Festival with crafts, games, rides and most importantly food. Without fail, the most popular food booth each year was the apple fritter booth, which made deliciously good deep fried apple fritters that were finished with a dusting of cinnamon-sugar. These little cookies reminded me of a much healthier apple fritter, without the accompanying sugar rush!

How much almond flour?
Martha McKinnon
The recipe says 1 cup of almond flour. Hope this helps. ~Martha
Brenda
Could you use kodiak kix instead of the almond flour?
Martha McKinnon
Hi Brenda, I haven't tried it. I think you would need more liquid with kodiak mix. If you try it let us know how it turns out. ~Martha
Charlotte
Could I be lazy and just use unsweetened applesauce?
Martha McKinnon
Hi Charlotte, I haven't tried it but think it would work fine. If your applesauce is runny, you might want to drain it a bit. ~Martha

Perfect recipe, thank hou

Yummy! These have a lot of flavor - probably depends mainly on the type of apple. I used Honeycrisp. They are amazing warm. Definitely recommend.

I went to make these, and realized I only have 1/4c almond flour left. I have just about every other alternative flour under the sun LOL. Would one of those be suitable? Coconut flour? Banana flour? Oat flour? Quinoa flour?
Ellen McCarthy
Very good recipe. I will try with almond flour soon, I used regular flour today because it is snowing here and cold!) in Michigan. I used some white chocolate chips and vanilla flavoring which helped with sweetness. Love this, thank you!

I made these with unsweetened applesauce and they were very good. I also added some swerve. Also, according to my WW recipe builder, they are only one point on WW purple.
