WW Recipe of the Day: Skinny Broccoli Salad
I didn't think I was a fan of broccoli salads. Most of them start out light and healthy but then get weighed down with heavy dressings and tons of bacon. But this light and crunchy skinny broccoli salad recipe has changed my mind.
Low Fat and Slow Calorie Broccoli Salad
Combining broccoli, grapes, celery and sunflower seeds in a light and slightly sweet dressing, it's a perfect summertime side dish solution. Great alongside most any grilled meat or fish, we've enjoyed it this week with both broiled salmon and chicken apple sausages.

This skinny gluten-free broccoli salad recipe is adapted from one I saw on Cooking Light's website. With its plump grapes and crunchy broccoli florets, celery and salty sunflower seeds, this may be one of the best salads I've ever had. It doesn't taste "healthy" at all.
I switched out ½ cup Craisins for 1 cup of raisins, used red grapes instead of green and reduced the sugar in the dressing by 1 tablespoon.
If you prefer, you could lightly blanch or steam the broccoli for a couple of minutes so that it remains crunchy but not "raw" tasting. Just be sure to drain it really really well and dry it with paper towels so your dressing doesn't get diluted.
I think this would be yummy with slivered almonds. And a sprinkling of crispy cooked bacon wouldn't hurt either. Enjoy!
How to Make this Broccoli Salad Step-by-Step?
Step 1: Assemble and Prep Your Ingredients
You'll need:

Cutting broccoli into florets
4 cups small broccoli florets
Slicing red grapes
1-½ cups sliced grapes
Chopping celery
1 cup chopped celery
Broccoli Salad Ingredients
Place these ingredients in a large bowl along with ½ cup dried cranberries and ¼ cup salted sunflower seeds/kernels.
Step 2: Make the Dressing

In a small bowl (affiliate link), whisk together the mayonnaise, yogurt, sugar and vinegar until well blended and creamy.
Step 3: Combine the Skinny Broccoli Salad Ingredients and Dressing

Pour the dressing over the skinny broccoli salad mixture and toss well to combine and coat everything. Chill for at least one hour before serving to give the flavors a chance to develop.

Skinny Broccoli Salad Recipe
Ingredients
- 4 cups small broccoli florets (about 1-½ pounds)
- 1-½ cups seedless red grapes, sliced in half
- 1 cup chopped celery
- ½ cup dried cranberries
- ¼ cup salted sunflower seed kernels
- ⅓ cup light mayonnaise
- ¼ cup plain fat-free Greek yogurt
- 2 tablespoons sugar, or sweetener to taste
- 1 tablespoon white vinegar
Instructions
- In a large bowl, stir together the broccoli, grapes, celery, cranberries and sunflower seeds.
- In a small bowl, whisk together the mayonnaise, yogurt, sugar and vinegar until well blended and creamy.
- Pour the dressing over the broccoli mixture and toss well to combine and coat everything.
- Chill for at least one hour.

I believe it is 4 SP's per her changes (1 cup raisins and reduced by 1 T. sugar). She did not make the changes in the recipe, so if you calculated the extra 1 T. sugar, it would bring it to the 5 SP's you mention. Hope that helps.

I keep this in the fridge --I have the dressing in a separate container--my dressing is a mayo/red-wine vinegar--bit of sugar-- this way salad doesn't get over-dressed or limp with dressing. I love this salad--you can add so many things to it...bacon bits, walnuts, jicama, diced water chestnuts--it is called "Martha's Salad" at my house.

I took this salad to a neighborhood potluck and doubled the recipe. I lightly blanched the broccoli, let it cool and proceeded to follow this recipe as written except for a tablespoon less sugar. (Double recipe so 3 instead of 4 T). Big hit! On a table laden with different salads, this one was the only bowl almost completely empty!
