Overnight oats have become one of my favorite breakfast strategies. I prep them the night before, and in the morning—when time is short and willpower can be low—something delicious is already waiting in the refrigerator. No cooking, no decisions, no excuses.
This version might be my favorite of all.
Just four simple ingredients—oats, almond milk, cheesecake-flavored pudding mix, and fresh raspberries—come together in minutes the night before so breakfast is waiting when you wake up. The result is creamy, berry-filled, and genuinely satisfying in a way that feels a little indulgent for something so simple.
I love fresh berries on just about everything, so the moment I tried raspberries on top, I was hooked. And when I wanted even more berry flavor, I started mashing the raspberries right into the oat mixture before refrigerating—what I call my Very Raspberry version. Both are delicious, and both fit beautifully into a slow and steady approach to healthy eating.

Why You’ll Love These Overnight Oats
- Ready in 5 minutes the night before—breakfast is waiting when you wake up.
- Just 4 common ingredients.
- Only 123 calories per serving.
- That creamy, tangy cheesecake flavor is genuinely satisfying.
- Easy to customize with blueberries, strawberries, or whatever berry you love.
Ingredients and Substitutions
- Old-fashioned rolled oats — The base of the recipe. Rolled oats soften beautifully overnight without getting mushy.
- Unsweetened almond milk — Keeps this light and creamy. Any milk works here—dairy, oat, soy, whatever you prefer.
- Sugar-free cheesecake Jell-O instant pudding mix — Just a quarter ounce gives you that unmistakable cheesecake flavor. If you’d rather avoid artificial sweeteners, use 0.85 oz (about a quarter of a box) of the regular cheesecake pudding mix instead.
- Fresh raspberries — For topping, or mash them right into the oats for a deeper raspberry flavor throughout.

Serving Suggestions
These oats are satisfying on their own, but a slice of whole-grain toast or a little extra fresh fruit alongside makes for a well-rounded breakfast. If you love creamy, fruit-forward oats, my Creamy Overnight Chia Orange Oats are another favorite worth trying.

FAQs
Can I use regular pudding mix instead of sugar-free?
Yes! Use about 0.85 oz (roughly a quarter of a standard box) of regular cheesecake instant pudding mix. It will add a few more calories and WW points, but it works beautifully.
Can I use frozen raspberries?
Fresh is best for topping, but thawed frozen raspberries work well if you’re mashing them into the oat mixture.
Can I make this ahead?
Absolutely—that’s the whole point! Prep it the night before and breakfast is done.
Do I have to use almond milk?
Not at all. Any milk you like works here—dairy, oat, soy, or cashew.
Where do I find cheesecake pudding mix?
Look in the baking aisle of most grocery stores, right alongside the regular Jell-O and pudding mixes. Sugar-free and regular versions are usually both available.
