Ingredients & Substitutions

Bread Flour

Bread flour creates the crispiest crust, but don’t worry if you don’t have any.

I’ve made this dough many times with all-purpose flour with excellent results.

You can also use:

  • White whole wheat flour
  • Half bread flour and half whole wheat flour
  • All-purpose flour

Whole grain flours will create a slightly chewier crust.

Salt

Just enough to enhance the flavor.

Warm Water

Warm tap water is all you need.

Olive Oil

Adds flavor and tenderness to the dough.

Extra virgin olive oil (affiliate link) is my preference, but any olive oil works well.

How to Make No Yeast Flatbread Dough

Step 1

Add the flour and salt to a food processor (affiliate link).

Pulse briefly to combine.

Step 2

In a small measuring cup stir together:

  • Warm water
  • Olive oil

With the processor running, pour the liquid mixture through the feed tube.

Process until a soft dough ball forms.

If the dough seems dry, add another tablespoon of water.

Continue processing for another 15 to 20 seconds until smooth.

Step 3

Turn the dough onto a lightly floured surface.

Cut into four equal pieces.

Step 4

Roll each piece into a thin rectangle or oval.

Because there is no yeast, you can roll the dough immediately. No waiting required.

Transfer to a parchment-lined baking sheet (affiliate link).

Add your favorite toppings.

Bake at 450F to 500F degrees until crisp and golden, about 10 to 15 minutes.

Traditional pizza sometimes feels a little too doughy for me these days.

Easy No Yeast Flatbread Dough

This Easy No Yeast Flatbread Dough is made with just 4 simple ingredients and comes together in minutes. Perfect for homemade flatbreads and thin crust pizzas with no rising time required.

Ingredients 

  • 1 cup bread flour, plus more for rolling out the dough
  • 1/2 teaspoon salt
  • 1/3 cup warm water, plus more if necessary
  • 1 teaspoon extra-virgin olive oil

Instructions 

  • Mix the flour and salt in the food processor.
  • Stir together the water and oil and pour over the flour mixture.
  • Process until a soft dough ball forms. If the dough is too stiff, add another tablespoon of water and continue to process until the dough is well kneaded, 15 – 20 seconds.
  • Lightly dust your hands and a clean surface with flour. Turn out the dough onto the lightly floured surface and cut the dough into quarters.
  • Working with 1/4 of the dough at a time, roll each out to a 12 x 4 – inch rectangle, dusting with flour and turning as necessary to prevent it from sticking.
  • Line a large cookie sheet with parchment paper or a silicone mat. (All four flatbreads should fit crosswise on the same sheet.)
  • Top as desired and bake in a hot (450F-500F degree) oven until the crust is golden and crisp (10 – 15 minutes).

Yes! That’s what makes this recipe so appealing. Since there is no yeast, there is no rising time either. Once the dough is mixed, you can roll it out immediately and bake.

Can I make this dough in a stand mixer?

Yes. While I usually make it in the food processor because it’s so quick, you can also mix the dough in a stand mixer fitted with a dough hook. Mix on low speed until a smooth dough ball forms, adding an extra tablespoon of water if needed.

Can I use all-purpose flour instead of bread flour?

Absolutely. Bread flour creates a slightly crispier crust, but I’ve used all-purpose flour many times with excellent results. White whole wheat flour or a combination of bread flour and whole wheat flour also works well.

Can I freeze the dough?

    Back looking for healthy remakes, and this is quite good. Next time I’ll try it with a little seasoning mixed into the dough. Or a light drizzle of olive oil. We took leftover roasted skinless chicken thighs, sauteed shiitake, cheddar, parmesan, and a Tbs of pine nuts. Produced an great pizza hack. We will definitely eat it again. And BTW over the last year my wife and I have lost a combined 69 pounds. Not by dieting, but by eating better hacking some favorite recipes to get the calories down. Thanks for doing this. It is appreciated.

    I make pizza all the time but I have ever tried a recipe without yeast… this recipe here is so simple and easy, so delicious and pure… I baked it with some sea salt and pepper then added a sprinkle of tomatoes and mozzarella after the flatbread crisped up. It tasted great and was on the plate in seriously 18 minutes.

        Made the flat beard for Sunday morning family breakfast. We served it purred tomatoes and seasoned tuna. They all loved it and asked for more. I added a little cinnamon and a couple raisins in the food processor. It’was great thanks. Best part it took less than an hour.

  8. Due to swallowing problems I’m trying to find homemade recipes for crisp a flat bread which crumbles easily when chewed – so my fingers are crossed that this will do the trick. I am so tired of a liquid diet!
