WW Recipe of the Day: Easy Egg Roll in a Bowl
Love egg rolls but not all the fat and calories? Then you are going to love this easy healthy egg roll in a bowl. We sure do.
This light and healthy easy egg roll in a bowl, which you can make in less than 30 minutes, is one of my new favorites. My husband loves it too.

So although the recipe is written to serve one I usually double it so we can both enjoy it for a tasty satisfying lunch or dinner whenever a Chinese food craving strikes.

Easy Egg Roll Bowl Recipe Notes
This recipe is slightly adapted from one I saw in the book Hungry Girl Clean and Hungry Obsessed (affiliate link) by Lisa Lillien.
I used granulated garlic instead of crushed because I didn't have any of the jarred kind on hand and didn't feel like mincing up fresh.
The recipe calls for cole slaw mix, a prepackaged mix of shredded cabbage (and occasionally carrot) available alongside packages of lettuce mix in most grocery stores. If a store-bought mix isn't your bag, just thinly slice your choice of green or red cabbage, and carrots.
I used more shrimp and bean sprouts than called for to use up what I had.
I served our egg roll bowls with extra condiments to recreate the taste of Chinese egg rolls - soy sauce, Trader Joe's sweet chili sauce and hot mustard - which really helped to kick it up a notch.

Recipe Additions & Variations:
No fresh bean sprouts? Substitute the canned kind.
No water chestnuts? Leave them out.
Spicier? Serve with a drizzle of your favorite hot sauce or Chinese hot mustard.
No Shrimp? Substitute shredded cooked chicken or pork
Different protein? Use Ground pork, or turkey or chicken or beef. Begin by browning the meat in your skillet and then continue with the recipe as written.
Vegetarian? Skip the shrimp and add vegetarian crumbles or tufu instead.
Pressure Cooker? We have a delicious Vegetarian Instant Pot Egg Roll Bowl made with sliced cremini mushrooms, carrots, celery and cabbage.
How to Make Easy Healthy Egg Roll Bowl Step-by-Step
Step 1: Assemble and Prep Your Ingredients

Ingredients:
- 1 tablespoon reduced sodium soy sauce
- 1 teaspoon sesame oil
- ¼ teaspoon granulated garlic
- ½ teaspoon ground ginger
- Dash black pepper
- 4 cups bagged coleslaw mix (shredded cabbage & carrots)
- 1 cup bean sprouts
- 3 ounces ready-to-eat bay (small) shrimp (I used frozen)
- ¼ cup chopped scallions
- ¼ cup canned sliced water chestnuts, drained and chopped
You will also need: a small bowl (affiliate link), a large skillet (affiliate link) with lid, and nonstick spray
Step 2: Make the Sauce
Mixing Soy Garlic Ginger Dressing
To make the sauce: in a small bowl (affiliate link), combine the soy sauce, sesame oil, garlic, ginger and pepper. Mix until well blended and set aside.
Step 3: Make Your Egg Roll Bowl

Set a large skillet (affiliate link) sprayed with nonstick spray over medium-high heat. Add the coleslaw mix, bean sprouts and ⅓ cup water. Cover and cook until the mixture has softened, 6 - 8 minutes.
Cooking Egg Roll in a Bowl with Shrimp
Uncover and if needed, cook and stir until water has evaporated, 2 to 3 minutes. Add the sauce, shrimp, scallions and water chestnuts. Cook and stir until hot and well mixed, 3 to 5 minutes.
Favorite Egg Roll in a Bowl Condiments (sweet chili sauce, soy sauce, hot mustard)
Enjoy with your favorite egg roll condiments, I like a little sweet chili sauce, hot mustard and extra soy sauce.

This was a quick and easy dish to put together. The first few bites were a little iffy, but the dish proved to be one of those that you don't want to stop after the first couple of bites. You find you enjoy it more as the meal progresses. I used leftover pulled pork instead of shrimp, which I did not have on hand.

This ENTIRE recipe is for 1 serving?? That sounds like an awful lot! Please clarify as I would hate to quadruple this for my family only to find out I'm wrong. When I changed the serving size to 4, it said to add 16 cups of coleslaw. YIKES! Thank you.

Hi Kristine, Yes this make one generous serving. The coleslaw mix cooks way down!! If you are trying to make multiple servings you'll want to use a big soup pot or wok instead of a skillet!!
