WW Recipe of the Day: Cinnamon Apple Baked Oatmeal Muffin Cups
Baked oatmeal is a great alternative to traditional porridge style oats. Individual oatmeal muffin cups are a particular favorite. They are easy to make, perfectly portioned controlled, and freeze beautifully.
So today I'm excited to share this recipe for Cinnamon Apple Pie Baked Oatmeal Muffin Cups, perfect for fall when apples are at their best. Heartier and denser than muffins, they are delicious warm from the oven, at room temperature or cold from the fridge. You can also reheat them for a few seconds in the microwave.

Recipe Notes, Substitutions & Variations
No Old-Fashioned Oats? I've also used quick cooking oats with great results. Just don't use instant oatmeal!
Apples? I used honey crisp apples picked from my sister's tree, but any apple variety you like or have on hand will work. Peeled or unpeeled. it's your choice. Be sure to chop the apples into small pieces of less than ½ inch to insure they soften during baking. You could also shred the apple instead of finely chopping if it's easier.
Different Spices? I used Penzeys Pie Spice instead of Cinnamon. Pumpkin pie spice would work well too.
