I just had my first fresh tomato sandwich at 59-years-old. I’m wondering what took me so long? Better late than never! Born and raised in the north, I wasn’t familiar with this southern summer staple. But it somehow caught my attention out on the internet.

With beautiful beefsteak tomatoes at their ripe and juicy summer peak, I decided to give this simple 3-ingredient sandwich a go.

Simple and delicious, all I can say, is YUM!!!! The combination of perfectly ripe tomato slices on toasted bread slathered with mayonnaise was a winner. I think you’ll agree.

To keep the calories and Weight Watchers points low I opted for light bread and light mayonnaise, but of course, the choice of ingredients is always yours ๐Ÿ™‚

How to Make Fresh Tomato Sandwich Step-by-Step

Step 1: Gather and prep your ingredients.

  • 2 slices light bread
  • 1 medium size beefsteak tomato, perfectly ripe
  • 1 tablespoon light mayonnaise
  • salt and black pepper

Step 2: Toast your bread and let cool slightly before spreading with mayonnaise.

Step 3: Core and thickly slice your tomato.

Step 4: Assemble your sandwich, cut in half and enjoy immediately.

Recipe Notes

Because they are the star attraction of this simple sandwich, be sure to select the ripest tomatoes possible.

I used Village Hearth Light Italian Bread as it was the only choice at my little grocery store here in northern Wisconsin. It worked very well. Choose whatever light bread you prefer, toasted or not.

Of course, there are lots of ways you can embellish this simple sandwich…

Possible Additions:

  • Basil
  • Cheese
  • Thinly sliced red onion
  • Crunchy lettuce leaves
  • Creamy avocado slices
  • Fancy up your mayonnaise by adding chopped basil, garlic powder and ground black pepper

Serving Suggestions

Enjoy right away! I chopped up the portion of the tomato that wouldn’t fit on the sandwich and ate it alongside. If you are really lucky, enjoy a perfectly ripe, juicy peach for dessert!

Fresh Tomato Sandwich Made Lighter

Tomato Sandwiches are a summertime staple. Thickly sliced beefsteak tomatoes sandwiched in between two pieces of toasted light bread spread with light mayonnaise.

Ingredients 

  • 2 slices light bread (I used Village Hearth Light Italian)
  • 1 medium beefsteak tomato, perfectly ripe
  • 1 tablespoon light mayonnaise (I used Hellman's)
  • Pinch Salt & pepper

Instructions 

  • Toast the bread to your liking. Let it cool a little while you prepare your tomato. Cut out the core and cut into thick slices with a sharp serrated knife to prevent squishing it.
  • Spread the toast with the light mayonnaise. Layer as many of the tomato slices as you can on top of one one piece of toast. Sprinkle generously with salt and pepper. Top with the other piece of toast, cut in half. Enjoy immediately!

    My favorite summer sandwich. I usually sprinkle the tomatoes with some Furikake (Japanese seasoning for rice or just about anything). Another favorite embellishment is to mix a tablespoon of grated parmesan or cheddar cheese with the mayo before spreading on the sandwich.
