If you love the cozy flavors of apple pie, these Apple Pie Baked Oatmeal Muffin Cups are going to be a hit in your kitchen. Hearty, perfectly portioned, and freezer-friendly, they are an easy way to enjoy baked oatmeal in a grab-and-go form.

I first made these with honey crisp apples picked from my sister’s tree, and they instantly became a family favorite. Warm from the oven, chilled from the fridge, or reheated in the microwave (affiliate link), they’re satisfying any time of day — breakfast, snack, or even a light dessert.

Ingredients and Substitutions

  • Old-fashioned oats — Rolled oats give structure. Quick oats also work, but skip instant.
  • Brown sugar — Adds just enough sweetness. Use coconut sugar or a sugar substitute if you prefer.
  • Baking powder — Helps keep the muffins light and structured.
  • Cinnamon — Classic apple pie spice. Try pumpkin pie spice or apple pie spice blends for variety.
  • Salt — Balances flavors.
  • Eggs — Hold the batter together. Use flax eggs for a vegan version.
  • Skim milk — Any milk works — almond, oat, soy, or coconut.
  • Unsweetened applesauce — Adds moisture and natural sweetness.
  • Vanilla extract — Brings out the pie-like flavors.
  • Chopped apple — Honey Crisp, Pink Lady, or Granny Smith are all delicious. Peel or leave unpeeled to your preference.
  • Old-fashioned oats — Rolled oats give structure. Quick oats also work, but skip instant.

3 PointsPlus (Old plan)
These baked oatmeal cups can be made completely ahead of time and frozen for up to 3 months. I make a double batch of these and freeze them all the time! They reheat beautifully, about a minute for two muffins.
No old fashioned oats? I’ve also used quick cooking oats with great results. Just don’t use instant oatmeal!
Apples? I used honey crisp apples picked from my sister’s tree, but any apple variety you like or have on hand will work. Peeled or unpeeled. it’s your choice. Be sure to chop the apples into small pieces of less than 1/2 inch to insure they soften during baking. You could also shred the apple instead of finely chopping if it’s easier.
Different Spices? I used Penzeys Pie Spice instead of Cinnamon. Pumpkin pie spice would work well too.
