Recipe Notes, Additions and Substitutions

The recipe calls for dry ranch dressing mix. If you prefer to make it yourself you can combine the following: 1/4 cup dried buttermilk powder, 1-1/2 tablespoons onion powder, 1 tablespoon garlic power, 1/2 tablespoon dried chives, 1/2 tablespoon dried dill, 1/2 tablespoon dried parsley, 2 teaspoons kosher salt and 1/2 teaspoon black pepper.

Serving Suggestions

I enjoyed my chicken bites alongside steamed green beans. Most any vegetable will be a great addition. Here are some of my favorite:

These delightful nuggets of chicken would also be wonderful atop a salad or stuffed into a sandwich wrap.

Ways to Use Leftovers

Since this recipe is designed to serve two, leftovers will be kept to a minimum. I liked to turn my leftovers into a Greek Chicken Bowl with rice, cucumbers, tomatoes and olives.

This recipe is a lifesaver. Watching cholesterol and pre diabetic I’m looking for recipes that helps both. While the family is eating chicken and dumplings I’m feasting on the ranch bites. I forgot to add the cheese but it’s delicious. I’ll be making this a lot. Thank you for a great recipe!!

  4. It doesn’t look pretty, and there’s a lot of liquid in the pan, but this was a winner tonight! So full of flavor (doesn’t even need to be salted personally). I’m not even a fan of chicken and this is for sure going in the dinner rotation!
