WW Recipe of the Day: Easy Spicy Veggie Sausage Bake

Summer means easy living and easy recipes in my house. I used to make a variation of this in our village in the Provence. There Merguez sausages are widely available because of the huge Moroccan influence in the region. These spicy sausages are usually made with lamb.

Here I opted for hot Italian spiced turkey sausages and grape tomatoes to keep the calories and WW Points low. Along with a little chopped rosemary that’s all there is to it. This is a true 2-ingredient wonder!

A quick and extremely tasty way to have lunch or dinner in a few minutes. Even the leftovers are easy. Simply chop up the extra sausages if you make extra ones and add them to any main course salad.

How to Make Spicy Sausage and Tomato Bake

Step 1: Gather and prepare all ingredients.

Step 2: Heat oven to 375F degrees. Spray a small baking pan with nonstick spray.

Step 3: Place sausages in the pan and bake for 15 minutes.

Step 4: Add the tomatoes to the pan and lightly season with salt and pepper.

Step 5: Continue cooking for 25 to 30 minutes, or until the sausages are cooked through and the tomatoes have wilted.

Step 6: Remove from the oven and serve.

Recipe Notes

If you’re cooking for 1, you can still make the whole recipe and save the rest for tasty leftovers.

If you prefer, then just cook 1 sausage with 1 cup of chopped tomatoes and cook for the same amount of time.

Any type of sausages, mild or spicy will work just fine here. If you use ones with lots of fat, drain it after the sausage bakes the first time. Usually with chicken or turkey sausages you’ll be fine and have little or no fat in the pan.

I used spicy Italian links however sweet Italian or any flavored sausage such as sun dried tomato, jalapeno or chicken apple would be equally delicious. You can even use fully cooked sausages.

The easiest tomatoes to use are grape or cherry tomatoes. You can just slice them in half. As they roast, they melt and become an excellent side dish to the sausage.

Of course you can bulk this up further with whatever vegetables you have on hand such as onion, zucchini, bell pepper, etc. 

Serving Suggestions

A side of beans is just the ticket for these sausages. I used white beans but black, kidney, pinto beans either with a spicy vinaigrette or salsa would round out the meal.

A sturdy glass of California white is what I’d choose however iced tea or any summertime beverage would bet tasty. If you serve this as fall approaches, then a light red would be ideal.

Ways to Use Leftovers

I made a delightful salad of sausage, white beans, the leftover roasted and melty tomatoes. Tossed with a spicy vinaigrette seasoned with mint it was worth taking a picture of it!

Both sausage and tomato make a great omelette filling or if you’re feeling hungry right away, simple reheat the leftovers gently in a microwave (affiliate link).

Ingredients 

  • 2 links chicken or turkey sausages
  • 2 cups (about 1 pint) cherry tomatoes, halved
  • 2 teaspoons chopped fresh rosemary leaves
  • Salt and pepper, to taste

Instructions 

  • Heat oven to 350F degrees. Spray a small baking pan with non-stick spray.
  • Place the sausage links in the prepared pan and bake for 15 minutes.
  • Add the tomatoes to the pan and lightly season with salt and pepper.
  • Return pan to oven and continue cooking for 25 to 30 minutes, or until the sausages are cooked through and the tomatoes have wilted.
  • Remove from the oven and serve.
