Looking for a quick dinner packed with bold flavor? This Easy Caribbean Shrimp Stir-Fry combines tender shrimp, colorful vegetables, sweet pineapple, smoky barbecue sauce (affiliate link), and fire-roasted tomatoes for a surprisingly delicious meal that comes together fast.

I’ll admit—when I first saw the combination of tomatoes, pineapple, and barbecue sauce (affiliate link), I was skeptical. But one bite completely changed my mind. The flavors blend together into a sweet-savory sauce that tastes far more complex than the simple ingredient list suggests.

Now it’s one of my favorite quick stir-fry dinners.

Ingredients & Easy Substitutions

  • Olive oil – or use avocado oil or another neutral cooking oil
  • Raw shrimp, peeled and deveined – fresh or frozen/thawed shrimp both work well; chicken, pork, or tofu can also be substituted
  • Fresh chopped vegetables – use your favorites such as carrots, peppers, green beans, broccoli, snap peas, celery, or zucchini
  • Garlic powder – or substitute fresh minced garlic
  • Italian seasoning – adds easy flavor; Cajun seasoning works too for extra spice
  • Water – helps steam the vegetables
  • Fire-roasted diced tomatoes – regular diced tomatoes also work
  • Unsweetened pineapple chunks – fresh pineapple can be substituted
