This Southern low fat kielbasa, bean and bacon soup has a hint of sweetness from the baked beans, making it easy for Weight Watchers of all ages to love.

Try using kale or a heartier greens (like collards, turnip, or dandelion).

To keep it vegetarian, remove the turkey bacon and sausage. Use a tablespoon of olive oil when sautéing the vegetables and double up on the pinto beans.

How to Make This Southern Low-Fat Kielbasa, Bean and Bacon Soup, Step-by-Step

Step 1: Gather and prepare all ingredients.

Step 2: In a medium to large saucepan, add the bacon, onion, bell pepper and celery.

Cook until soft over medium heat, stirring frequently (about 7 minutes).

Step 3: Stir in the garlic and tomato paste. Cook for one minute.

Step 4: Add the baked beans, pinto beans, sausage, and water. Stir to combine and let simmer for 15 minutes over medium heat.

Step 5: Add the milk and stir. Continue to simmer for 10 more minutes.

Ingredients 

  • 2 slices turkey bacon, cut into 1/2-inch pieces
  • 1 small onion (about 1 cup)
  • 1 green bell peppers, seeded and chopped
  • 1 celery stick, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 can (14 to 16 ounces) vegetarian baked beans
  • 1 can (15.5 ounces) pinto beans, drained
  • 1/2 pound turkey kielbasa, or smoked sausage, cubed
  • 1 cup water
  • 1 cup 2% milk
  • 6 cups spinach, or mustard greens, chopped
  • Black pepper, to taste

Instructions 

  • In a medium to large saucepan add the bacon, onion, bell pepper and celery. Cook until soft over medium heat, stirring frequently (about 7 minutes).
  • Stir in the garlic and tomato paste and cook for one minute.
  • Add the baked beans, pinto beans, sausage and water. Stir to combine and let simmer for 15 minutes over medium heat.
