Ingredients & Substitutions

  • Boneless skinless chicken breasts – Lean and tender. Chicken thighs work too if you prefer.
  • Light refrigerated Alfredo sauce – I like Buitoni, but any light Alfredo sauce will work.
  • Broccoli florets – Fresh broccoli gives the best texture, but frozen florets can also be used.
  • Penne pasta – Penne holds the sauce well. Rotini, bow ties, or shells are good alternatives.

Optional:

  • grated Parmesan
  • cracked black pepper
  • chopped parsley

How to Make Slow Cooker Chicken Broccoli Alfredo

Ideal Slow Cooker Size: 1-1/2- to 2-Quart.

  1. Cut the chicken into bite-size pieces and place in the slow cooker.
  2. Pour the jar of sauce over the chicken.
  3. Cover and cook on LOW for 3 to 4 hours, or until the chicken is cooked through and tender.
  4. Cook the pasta according to the package instructions, adding the broccoli to the water during the last 5 minutes of cooking. Drain.
  5. Stir together the pasta and broccoli and chicken and alfredo. Season to taste with salt and pepper.
  6. Serve sprinkled with grated Parmesan cheese, if desired.

Tips for Success

  • Cut the chicken into evenly sized pieces so it cooks evenly.
  • Avoid overcooking the chicken—it can become dry if left too long.
  • Cook the broccoli with the pasta during the last few minutes to save washing another pan.
  • Stir everything together just before serving so the pasta absorbs some of the sauce.

Variations

Add mushrooms

Sautéed mushrooms pair beautifully with Alfredo. Canned mushrooms also work.

Add spinach

Stir in a few handfuls of baby spinach just before serving.

Use rotisserie chicken

Skip the slow cooker and simply warm shredded rotisserie chicken in the Alfredo sauce while the pasta cooks.

Change the pasta

Rotini, shells, farfalle, or whole wheat pasta all work well.

How to Store Leftovers

  • 3/4 pound boneless skinless chicken breasts
  • 1 container (10 ounces) refrigerated light alfredo sauce (I used Buitoni)
  • 4 cups broccoli florets
  • 2 cups (4 ounces) penne pasta

Instructions

Using light alfredo sauce instead of regular saves a ton of fat and calories. I used the refrigerated kind, but jarred should be okay too. The sauce thinned out a lot during cooking but was fine once I tossed it with the pasta and broccoli.

Can I use frozen broccoli?

Yes. Add it during the last few minutes of cooking the pasta just as you would fresh broccoli.

Can I use jarred Alfredo sauce?

Absolutely. Refrigerated Alfredo tends to taste a little fresher, but jarred light Alfredo sauce also works well.

Can I cook the pasta in the slow cooker?

I don’t recommend it. Cooking the pasta separately gives much better texture and helps prevent it from becoming mushy.

Can I use chicken thighs?

Yes. Boneless skinless thighs stay very moist and work beautifully in this recipe.

Can I make this ahead?

  1. This Chicken Alfredo recipe was so easy and delicious! I bought a jar of lite, Classico brand, Asiago cheese flavor and added some seasonings at the end such as oregano,garlic, salt and pepper. Made this for our 26th Anniversary dinner and my husband loved it.

I love crockpot cooking esp. since we camp a lot (haven’t tried yet but should work ) and I got hooked on crockpot cooking after living in Fairbanks, Alaska where we were stationed in the military back in 2000. Busy raising three kids, freezing outside, smelled good in the house cooking and a nice hearty meal at the end of the day. Now, my kids are grown and recently lost 15 lbs. walk every day, lifetime member of WW, and looking for healthy, delicious meals.
