Weight Watchers Recipe of the Day: Greek Herb Dip Made Lighter

Here’s a light and refreshing Weight Watchers friendly dip made with nonfat Greek yogurt, scallions, garlic, cucumber, and fresh herbs with just 29 calories and 0 WW Points in a quarter of a cup serving.

Enjoy it with fresh vegetables as a healthy snack or appetizer. This skinny herb dip is also delicious dolloped onto baked potatoes.

Greek Herb Dip and Veggies

I first made this dip as a “sauce” to accompany simple baked lemon chicken thighs, from Nigella Lawson’s Nigella Kitchen: Recipes from the Heart of the Home (affiliate link). But as soon as I began combining the ingredients, I immediately thought “dip” and cut up some red pepper strips and cucumber slices to enjoy with it as a healthy afternoon snack.

And truthfully we preferred dolloping it on our baked potatoes more than the chicken.

I used a combination of cilantro and mint, but parsley and dill would work well too. And a little splash of fresh lemon juice wouldn’t hurt either.

Are you mad about dips? I am. Dips and spreads are without a doubt my go-to favorites when I need a quick and easy appetizer or snack.

Low Calorie Greek Herb Dip Recipe

A light and refreshing low calorie dip made with Greek yogurt, cucumber and fresh herbs.

Ingredients 

  • 2 cups nonfat Greek yogurt
  • 4 – 6 scallions, chopped
  • 1/2 jalapeno, seeded and finely chopped
  • 1 clove garlic, peeled and minced
  • 1/2 cucumber, peeled and finely diced
  • 3 tablespoons fresh chopped cilantro
  • 3 tablespoons fresh chopped mint
  • Salt and pepper to taste

Instructions 

  • In a medium bowl, stir together the yogurt, scallions, jalapeno, garlic, cucumber, and most of the cilantro and mint (reserving a little to sprinkle on top as a garnish) until well blended. Add salt and pepper to taste.
  • Cover and chill for at least one hour.
  • When you are ready to serve, transfer the dip to a serving bowl and top with the reserved cilantro and mint.
  • Serve with an assortment of raw vegetables and/or pita chips.
