If you love the nostalgic flavors of classic s’mores but want an easy, campfire-free version, these Sugar Cookie Chocolate-Hazelnut S’mores are sure to become a family favorite.
A package of crispy sugar cookies take the place of traditional graham crackers, while creamy chocolate hazelnut spread, toasted marshmallows, chopped dried apricots and toasted hazelnuts create an irresistibly sweet and gooey filling.
Ideal for backyard barbecues and neighborhood potlucks or anytime you are craving a simple sweet treat, these little no-bake sandwich cookies come together in minutes with a handful of easy-to-find ingredients. They deliver all the chocolatey, marshmallow goodness of traditional campfire s’mores, with the delicious upgrade of crispy sugar cookies.

Ingredients
- Chocolate Hazelnut Spread (such as Nutella or Bonne Maman)
- 8 sugar cookies (such as Pepperidge Farm Bordeaux Caramelized Crisps)
- Finely chopped dried apricots
- Mini marshmallows
- Toasted hazelnuts, chopped

How to Make Sugar Cookie Chocolate Hazelnut S’mores, Step-by-Step
Step 1: Gather and prepare all ingredients. Preheat the broiler, if using. (Alternatively you can use a microwave (affiliate link).)
Step 2: Spread about 1-1/2 teaspoons of chocolate hazelnut spread on each of 4 sugar cookies, then sprinkle each one with about 1-1/2 teaspoons chopped apricots and top with 4 mini marshmallows.
Step 3: Place on an oven-safe dish and broil for 1-2 minutes, or until the marshmallows are melty and turn golden. Alternatively, place cookies on a microwave (affiliate link)-safe plate and microwave on HIGH for 20 seconds, or until the marshmallows puff. Note: If using the microwave, your marshmallows will get melty, but they won’t get the beautiful golden char you get with the broiler.
Step 4: Top each with one of the 4 remaining cookies. Enjoy!
