Looking for a fresh, colorful salad that’s a little different from the usual green salad?

This Orange Cucumber Salad combines sweet juicy oranges, crisp cucumbers, crunchy bell pepper, and red onion in a light tangy dressing. It’s simple, refreshing, and comes together in just minutes.

While cucumber salads are often associated with summer, I especially love this salad during citrus season, when oranges are at their sweetest and most flavorful. It’s a wonderful way to brighten up winter meals and equally delicious alongside summer favorites hot off the grill.

Whether you’re serving it with roasted chicken in January or grilled fish in July, this easy salad adds freshness, color, and flavor to any meal.

Ingredients & Substitutions

Oranges – The star of the salad. Navel oranges work beautifully, but Cara Cara oranges, mandarins, or blood oranges are also delicious.

Cucumber – Adds cool crunch and freshness. English cucumbers, Persian cucumbers, or garden cucumbers all work well.

Bell pepper – Adds color and sweetness. Red, orange, yellow, or green peppers can be used.

Red onion – Adds a little bite and contrast. Thinly sliced sweet onion or green onions are good substitutes.

Rice vinegar or apple cider vinegar – Adds brightness and balances the sweetness of the oranges.

Oil – Just a small amount helps bring the dressing together. Olive oil works well too.

Sweetener – A touch of sugar, Truvia (affiliate link), monk fruit, or your preferred sweetener helps balance the acidity.

Salt – Enhances all the flavors.

Step 5: Chill and serve

Serve immediately or refrigerate for 30 minutes before serving to allow the flavors to blend.

Recipe Notes

This simple salad is incredibly flexible.

Try adding:

  • Fresh mint
  • Chopped parsley
  • Feta cheese
  • Avocado
  • Thinly sliced fennel
  • Toasted almonds or pistachios

I often use red bell pepper instead of green because I prefer its sweeter flavor and brighter color.

The salad is best served the day it’s made, while the oranges and cucumbers are at their freshest.

What to Serve with Orange Cucumber Salad

his versatile salad pairs beautifully with:

  • Grilled chicken
  • Salmon
  • Shrimp
  • Tuna
  • Pork tenderloin
  • Roast chicken
  • Sandwiches and wraps
  • Holiday meals featuring ham or turkey

It’s equally at home on a summer picnic table or a winter dinner menu.

How to Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Because the oranges release juice as they sit, the salad is best enjoyed within the first day.
