Sweet oranges, crisp cucumbers, bell pepper, and red onion are tossed in a light tangy dressing to create this refreshing Orange Cucumber Salad. Quick to make and perfect for both citrus season and summer meals.
3oranges, peeled and sliced (I cut my slices into quarters)
1cucumber, peeled and sliced (I used an English cucumber so kept the peel and sliced it into half moons)
1/2green bell pepper, sliced or chopped (I used red instead)
1/4red onion, thinly sliced
3tablespoonscider vinegar, I substituted rice vinegar
1teaspooncanola oil
1/2teaspoonsugar, I substituted Truvia
1/4teaspoonsalt
Instructions
In a medium bowl, combine the oranges, cucumber, pepper and onion.
Add the vinegar, oil, sugar and salt.
Toss to coat and combine.
Serve at once.
