WW Recipe of the Day: Instant Oatmeal Microwave Muffin Cup
A simple and satisfying way to turn a cup of WW Instant Oatmeal (affiliate link) into an Instant Oatmeal Muffin Cup. This single serving of microwaved baked oatmeal was tasty to me, a longtime lover of oven baked oatmeal muffin cups.
An easy, healthy, breakfast packing 13 grams of protein, it kept me satisfied for hours.

The first thing I tried was the Pumpkin Spice Instant Oatmeal Cups. Since it is a limited edition it made sense to me to give it a try.
According to the WW App, each cup of WW Instant Oatmeal (affiliate link) (Apple Cinnamon, Cranberry Orange, Maple Brown Sugar, Pumpkin Spice) has 3 SmartPoints (green, blue purple.)
Yesterday I made it the traditional way, stirring in â…“ cup of boiling water and then letting it sit for a few minutes to thicken up. I thought it was pretty good, but the portion seemed a bit skimpy.
I bulked it up with a chopped microwaved apple to which I added some sweetener and pinch of cinnamon. The combination kept me satisfied for hours which was a nice surprise.
Today I decided to experiment with turning the oatmeal into a "muffin" by adding an egg, unsweetened applesauce, sweetener, baking powder, and cinnamon, which I microwaved until set.
As a lover of baked oatmeal I was pleasantly surprised with the result. It made me much happier than yesterday's oatmeal. It's definitely a do-over and I look forward to experimenting with different oatmeal flavors and seasonings.

Ingredients
- 1 container WW Instant Oatmeal (affiliate link) (I used pumpkin spice flavor)
- 1 large egg
- 2 tablespoons unsweetened applesauce
- 2 packets non calorie sweetener (I used Truvia (affiliate link))
- ¼ teaspoon baking powder
- pinch cinnamon
Instructions
- Stir the egg, applesauce, sweetener, baking powder and cinnamon into the cup of WW Instant Oatmeal (affiliate link) until the mixture is well combined. Â
- Let cool a bit. Eat with a spoon or fork right from the cup or tip it out onto a plate. Eat as is or top with additional fruit.Â

I thought it turned out well. I get tired of eating oatmeal the normal way. Didn’t have WW cup so I used a package of Kodiak protein oatmeal

Do we cook the oatmeal and then add ingredients and cook again?

No, you stir together the dry oatmeal with other ingredients and microwave once.

I tried these today and made some adjustments for what I had available to me. I added cooked apples in place of the applesauce, added a ripe banana in place of the sweetener and a cup of can pumpkin purée, I also added a half cup of whole wheat flour for more volume as I doubled the recipe and made them more like bites to get more servings and to reduce the point value, each bite came to 1 point , I made 12. They came out very tasty!! Great with a cup of tea or coffee ?
