Recipe Notes

This low calorie banana oat yogurt blender muffin recipe has NO butter, sugar, oil, or flour so in addition to being light and wholesome, they are also gluten-free.

Greek yogurt and honey are called for. I used fat free plain Greek yogurt which is now zero points on the new WW Program. I substituted Truvia baking blend (affiliate link) for the honey, which didn’t change the points value.

The best part about this easy healthy banana oat muffins recipe is that the batter is made in a blender, so there is less cleanup!

Ingredients

  • 2 cups oats (quick cooking or old-fashioned)
  • 2 large very ripe bananas
  • 2 large eggs
  • 1 cup plain nonfat Greek yogurt
  • 2 tablespoons honey
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon kosher salt
  • Up to 1/2 mini chocolate chips

Recipe Variations

No mini chocolate chips?
Substitute 1/2 cup of you favorite mix-ins such as regular chocolate chips, peanut butter chips, chopped dark chocolate, nuts, dried cranberries, or blueberries (fresh or frozen and rinsed).

No honey?
Substitute 2-3 tablespoons you favorite sweetener. I used Truvia Baking Blend (affiliate link).

  1. I forgot to put the liquid ingredients in first, I had a lot of trouble getting them mixed in my old blender. I ended up with more than 12 muffins. I didn’t spray the papers so they really stuck. They were brown on the top and bottom but still gooey inside, maybe because I used blueberries. . Otherwise, for a low point muffin they tasted OK. I will try them again and try to adjust my method.
