Tell Us A Little Bit About Your Weight Struggle
I gained 70 pounds when I got pregnant with my son at 22—I went from 150 to 220 pounds. Over the years, I had two daughters and I ended up weighing 275.

I wasn’t motivated to get the weight off and it kept going up. I was depressed and discouraged.

What Was Your Wake-Up Call Or “A-Ha Moment” That Caused You To Really Commit Yourself To Succeeding?
I turned 50 in October and I was 25 pounds shy of 300. I knew that if I didn’t take control of my health that I would begin to start suffering from health issues that ran in my family like high blood pressure, diabetes and heart disease.

How Have Your Eating Habits Changed Since Beginning Your Journey? What Did You Eat Before And What Are You Eating Now?
I stopped eating excessive carbs. I now eat fewer carbs and more healthy food.

I used to eat a bunch of rice, pasta and sweets. Now I eat lean protein, veggies and good fat like avocado and olive oil.

What Is The Difference In Your Fitness Before You Started And Now?
I used to lead a sedentary lifestyle, but now I walk on a regular basis.

What Has Been The Biggest Change/Payoff For You So Far?
Losing 60 pounds over the past 5 months. I can walk without losing my breath and I can sleep without snoring.

How Much Weight Have You Lost? How Long Did It Take You To Lose It?
I’ve lost 60 pounds over a 5 month period.

Karen’s Favorite Thai Chicken Soup with Lemon

Ingredients:

  • 1 can of lite coconut milk
  • 1 can of rotel
  • 2 chicken breasts, diced
  • 1 squash, diced
  • 1 lemon, squeezed
  • 1 bunch of spinach

Instructions:

  1. Add the coconut milk, rotel, diced chicken breasts and squash to a soup pot over medium heat.
  2. Heat until squash is cooked through.
  3. Add the lemon juice and spinach and cook until spinach is wilted.

Any Advice and/or Words of Wisdom for Others Who Are Struggling?
