WW Recipe of the Day: Skinny Caramel Apple Nachos

One of my favorite treats growing up was a caramel apple. I couldn’t wait for fall and all the festivals where you would find the crisp sweet treats on a stick. They were so tasty, but often quite messy to eat.

I tried a few times to make caramel apples at home, but it takes a bit of work. And they never seemed to taste as good as the ones you buy.

Today when I’m craving a crunchy sweet treat I often grab a granny smith apple.

For something extra special, I slice it up and make these caramel apple nachos. All the flavors are the same, but this version is a lot easier to eat. Plus it’s much lower in calories.

Granny Smith apples are a little on the tart side, which contrasts well with the sweet caramel topping in this recipe. If you can’t find green apples, Fuji or HoneyCrisp apples will work well too.

If you want to make them ahead, or keep some apple slices on hand, remember to dip your apple slices in a little lemon water so they won’t brown. Just a 1-2 teaspoons of lemon juice to a cup of cold water. Soak the apples slices for a minute or two, remove and pat dry.

The OXO Apple Corer and Slicer (affiliate link) makes quick work of coring and slicing you apples. It’s one of my favorite kitchen gadgets.
