Step 1: Assemble and prep your ingredients.

Step 2: Cook macaroni.

Bring a large pot of water to boil. Add macaroni and cook until tender, 7-8 minutes, stirring occasionally.

Step 3: Microwave vegetables.

Meanwhile place cauliflower and peas in a microwave safe bowl (affiliate link). Microwave (affiliate link) for 2 to 3 minutes or until thawed.

Step 4: When the macaroni is done drain it in a strainer and return it to the pot. Add cheese from packet, milk and butter. Mix thoroughly.

  • No cauliflower rice? Or not a fan? Chopped broccoli or chopped spinach would be good alternatives. As would thawed frozen broccoli, cauliflower and carrot mix.
  • No tuna? Canned salmon or canned chicken could be substituted. You could also use chopped or shredded cooked chicken or chopped ham.
  • Creamier? Stir in a little light sour cream or Greek yogurt to make the cheese sauce even richer and creamier.

  • 2 cups frozen riced cauliflower
  • 1 cup frozen peas
  • 2 tablespoons fat free milk
  • 2 tablespoons light butter
  • 1 (5-6oz) can tuna packed in water, drained

    I’m very sorry Martha to not give this a great review. Made this for supper tonight and was very disappointed.
    Followed the directions, it turned out dry and tasteless.
    I will try to make it again though, but add some onions, garlic, mushrooms fresh thyme and basil. Topped with sliced tomatoes. Instead of the blue box, I think I will try the Velveeta shells and cheese. They are creamier.
