WW Recipe of the Day: Chicken Sausage and Apple Salad
I’m excited to share this amazingly flavorful salad with you today. Made with chicken sausage and your favorite apples, it’s perfect for fall. I took it one step further by using chicken apple-sausage, but any pre-cooked chicken sausage will work in this super satisfying tasty salad.

Ingredients
Chopped lettuce (I used baby arugula): Baby arugula is tender and peppery, adding a fresh, slightly spicy flavor to the salad. It’s packed with vitamins and antioxidants, making it a healthy choice to complement the sweet and savory ingredients. Use whatever lettuce you prefer and/or have available.
Fully cooked chicken sausage, sliced into coins (I used chicken apple sausage): Chicken apple sausage brings a blend of savory and sweet flavors, with the chicken providing a lean source of protein and the apples adding a hint of natural sweetness. Slicing the sausage into coins helps distribute the flavor throughout the salad.
Sliced apple (I used Honey Crisp): Honey Crisp apples are sweet, crisp, and juicy, providing a refreshing crunch to the salad. They balance the richness of the sausage with their natural sweetness and bright flavor. I also like Pink Lady and Golden Delicious.
Sliced onion: Sliced onions add a savory, slightly sweet, and tangy flavor when sautéed. Their mildness complements the other ingredients while adding a bit of texture to the salad.
Chopped garlic (I used granulated garlic): Garlic adds a savory depth to the salad, with its pungent and aromatic flavor that enhances the dish. Using granulated garlic provides a subtler garlic taste, blending seamlessly into the dressing and sautéed ingredients.
Dried thyme leaves: Dried thyme offers a warm, earthy, and slightly floral flavor that pairs beautifully with the sausage and apple. It enhances the overall seasoning profile without overpowering the dish.
Dijon mustard: Dijon mustard has a tangy, slightly spicy kick with a smooth, creamy texture. It’s the perfect ingredient for balancing the sweetness of the apple and the savory sausage, adding depth to the salad dressing.
How to Make Chicken Sausage & Apple Salad, Step-by-Step
Step 1: Assemble and prep your ingredients.

Step 2: Place lettuce in a large bowl.

Step 3: Cook the sausage, apple, onion, garlic and thyme until browned and soft then stir in the mustard.


Step 4: Spoon the mixture over the lettuce. Drizzle with your favorite dressing, If desired. I love this easy peasy 3-Ingredient Low Fat Honey Mustard Dressing on top.
Cooking Notes, Variations and Substitutions
Lettuce?
Use what ever type of lettuce you prefer – romaine, iceberg, green leaf, arugula, mixed greens, spinach or a combination.
Onion?
Any onion will work – yellow, red or white.
Sausage?
Any fully cooked chicken or turkey sausage will work. (One link is about 3 ounces.) You could also substitute cubes of raw chicken breast or lean pork tenderloin if you prefer.
Apples?
Any apple that will stand up to cooking without getting mushy is a good choice. I used honey crisp. Gala, fuji, granny smith, golden delicious would work well.
Dressing?
You may or may not need extra dressing for this salad. I added a drizzle of this super yummy 3-Ingredient Honey Mustard Dressing which worked really well.

Chicken Sausage and Fresh Apple Salad Recipe

Ingredients
- 3 cups chopped lettuce (I used baby arugula)
- 3 ounces (about 1 link) fully cooked chicken sausage, sliced into coins (I used 1 link of chicken apple sausage)
- 1 cup sliced apple (I used Honey Crisp)
- 1 cup sliced onion
- 1 teaspoon chopped garlic (I used 1/8 teaspoon granulated garlic)
- 1/8 teaspoon dried thyme leaves
- 1-1/2 teaspoon Dijon mustard
Instructions
- Place lettuce in a large bowl.
- Set a large skillet (affiliate link) sprayed with nonstick spray over medium-high heat. Add the sausage, apple, onion, garlic and thyme. Cook, Stirring often, until the sausage has browned and the onion as softened, 6-8 minutes.
- Add the mustard and stir until blended.
- Spoon the mixture over the lettuce.
