I think this Crock Pot Baked Oatmeal is a great way to begin the day.
I’ve been making Baked Oatmeal for several years now, but had never done it in the crock pot until yesterday, using a recipe from Fix-It and Forget-It New Cookbook: 250 New Delicious Slow Cooker Recipes (affiliate link) as my guide.

Recipe Notes
If you’ve never had baked oatmeal you’re in for a treat. To me it tastes like a warm-from-the oven oatmeal muffin or cookie, rather than cereal.
I kept this batch of baked oatmeal kinda plain. But you can add fruit (fresh, frozen or dried) or nuts if you prefer to fancy it up. I love it with fresh fruit and/or yogurt.
If you let the baked oatmeal sit for a while after it’s done cooking, you’ll be able to cut it into sections that should lift right out. And you can store the leftovers in the fridge to enjoy all week long.

Crock Pot Baked Oatmeal Recipe

Ingredients
- 1/4 cup oil
- 1/4 cup unsweetened applesauce
- 3/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 large eggs
- 1-1/2 cups skim milk (I used vanilla coconut milk beverage)
- 3 cups uncooked oatmeal (rolled or quick oats)
- 2 teaspoons baking powder
Instructions
- Ideal slow cooker size: 2- to 3-Quart.
- Coat your slow cooker with nonstick cooking spray.
- In a large bowl whisk together the oil, applesauce, brown sugar, cinnamon, salt, and eggs until well blended and creamy. Whisk in the milk.
- Add the oats and baking powder and stir until well mixed.
- Pour into your greased slow cooker.
- Cover and cook on LOW for 3 to 5 hours, until the edges are golden brown and the center is set. (Mine was done in 4 hours.)
- Serve hot or let it stand in the slow cooker for up to an hour and then cut it into pieces for serving.

Hi Martha!
Just made this recipe but I tweaked it a little and was able to reduce the points to 3.5 per serving. I made the servings a little bigger so only 6 servings for me but if you can get 8 servings then the points would be even less!! I used Swerve Brown sugar substitute (0 pts) and Premier Vanilla Shake (3pts) instead of skim milk. I also added frozen blueberries. It was very yummy!!
