I'm excited to share this recipe from the Hungry Girl Magazine (affiliate link) (Fall 2021) for Vanilla Latte Growing Oatmeal. Super tasty and satisfying, it's the perfect way to begin the day when you're craving a belly-warming breakfast.
"Growing" oatmeal is one of Hungry Girl's signature dishes. You cook the oats with double the liquid as standard oatmeal and simmer them for twice as long. The result is a ginormous serving of creamy oats.

Vanilla Latte Growing Oatmeal Bowl
Ingredients
- 1 tablespoon sugar free French vanilla powdered creamer
- 1-½ teaspoons instant coffee granules
- 1 cup unsweetened almond milk
- ⅓ cup old-fashioned oats
- ⅛ teaspoon cinnamon
- dash salt
Optional Toppings:
- Mini semisweet chocolate chips, cocoa powder, chopped almonds, cinnamon
Instructions
- In a medium-size nonstick saucepan, dissolve the creamer and instant coffee granules in 1 cup very hot water. Stir in the remaining ingredients.
- Bring the mixture to a boil. Lower the heat and simmer 12-15 minutes, until mostly thick and creamy. Transfer oatmeal to a bowl and allow to cool until thickened, 5-10 minutes.
