I would start with zucchini and try lots of sauces with it. Then make salads with several kinds of veggies, experiment with the combined flavors. I have been thinking of getting one of these.
I would love to try kohlrabi and beets. They are two of my favorites.
Carrots and beets are fun and different in salads and cooked!
