Favorite vegetable is corn. However; asparagus runs a close second. Ane then, there is broccolli.
There aren’t many salads that I don’t like; but my favorite is my “Toss Up” salad.
This salad is made up of the leftovers in my refrigerator. Whether it’s leftover protein, vegetables, fruit or even cheese, it’s good for me both nutritionally and monetarily.
My favorite vegetable is garden fresh eggplant. I just made a fabulous “meatball” recipe with them.
garden tomatoes, chopped avocado with low-fat feta crumbles with olive oil, dash of italian seasong, salt & pepper – yummy
My absolute favorite salad is actually my daughter’s pasta salad. Not sure what she does to it, but it’s wonderful! Second runner up is any salad with fruit (especially strawberries! Love those berries. ) I have one of those containers to keep them in, and they last a long time if I can keep them hidden from my grandchildren
Broccoli slaw with cucumbers and slivered almonds
I love to make salads with butter lettuce. It’s just so much better than iceberg lettuce. I’ll add some 0 point turkey, one boiled egg and 1/2 cup fat free shredded cheddar cheese with 2 tbsps of cucumber dill greek yogurt dressing for a 4 point meal with lots of protein!! These items would be perfect for my go to salad! Thank you!!

My fav salad is the Zaxby’s grilled Cobb – so delicious with lite vinegarete dressing!!!
My favorite veggie is spaghetti squash also butternut.
