WW Recipe of the Day: Low Fat Instant Pot Chicken Wings

The Super Bowl and chicken wings just seem to go together. Obviously I’m not the only one who feels this way, because chicken drummettes were sold out in several stores on Super Bowl Sunday. Yes, shame on me for waiting until the last minute to buy them.

Honestly since we are trying to lose weight, I thought chicken wings were off limits. You say wings, and I immediately think of the deep-fried butter sauce laden wings you find in restaurants.

What we wanted was a healthier low fat version.

Low-Fat InstantPot Chicken Wings

At first the oven fried chicken wing recipe my mother makes came to mind. They are good, but they take quite a while to bake. Not only that but it seems like most of the coating gets washed off. And they don’t always get to the crispness we prefer.

So to speed things up, I pulled out the Instant Pot (affiliate link). The wings cooked in 10 minutes. Then I coated them in a dry rub and placed them under the broiler for 5-8 minutes.

We were so pleased with the way they turned out, we are now enjoying them every couple of weeks. They aren’t just for a special occasion anymore.

Ways to Use Leftovers

Who ever has leftover wings??? Seriously…

But if you do have a few wings leftover, make a quick and easy ramen bowl by combining 1-2 wings with chicken stock and rice noodles. Top with bean sprouts, a hard boiled egg, and fresh chopped cilantro or mint.

Recipe Notes

If you can’t find the drummettes, or want to save a little money, use full wings. Cut off and discard the tips. Cut each wing at joint to make two sections. Here’s a video that shows you how:

  • Put them on a hot grill instead of under the broiler to crips them up.
  • I used Bad Byron’s Butt Rub BBQ Seasoning (affiliate link), which I prefer because it has no sugar or msg. Feel free to use any dry seasoning you like –  cajun, blackened, lemon pepper, BBQ, Southwest, etc.
  • Brush on any BBQ or wing sauce when wings are done.
  • Use just wings sauce without the dry rub.
  • Crumble a little blue cheese over the platter of cooked wings.

Low Fat Instant Pot Chicken Wings

These low fat crispy chicken wings can be made in less than 30 minutes, so you can enjoy them guilt-free any night of the week.

Ingredients 

  • 3 pound bag of chicken wing drummettes
  • 2 tablespoons Frank’s Red Hot Sauce
  • 1 cup water
  • 1 teaspoon Butt Rub BBQ Seasoning (affiliate link) (or any dry barbecue seasoning blend)

Instructions 

  • Add 1 cup of water to Instant Pot. Put rack in pot. Spray a sheet pan with cooking spray and set aside.
  • Place chicken wings in a large mixing bowl (affiliate link)Add hot sauce and 1 teaspoon seasoning. Toss to coat the wings.
  • Place chicken wings on top of rack close and lock the lid.
  • Cook on HIGH pressure for 10 minutes. Quick release pressure when done.
  • Remove wings with tongs and place on the prepared sheet pan. Sprinkle seasoning over wings and rub to coat thoroughly.
  • Broil wings for 5-8 minutes to crisp to desired doneness.
