Dinosaur Kale Salad Recipe
Ingredients
- 1 bunch dinosaur (lacinto) kale, thick stems removed and leaves thinly sliced
- 4 cups shredded red cabbage
- 2 naval oranges or clementines, peeled and segmented
- ½ small red onion, thinly sliced
- 1 large red bell pepper, cored and seeded and thinly sliced
- ⅓ cup sunflower seeds
- ⅓ cup dried cranberries
- ¼ cup Dijon mustard
- ¼ cup freshly squeezed orange juice
- ¼ cup balsamic vinegar
- ½ teaspoon freshly ground black pepper
Instructions
- In a large bowl, combine the kale, cabbage, orange, onion, pepper, sunflower seeds and dried cranberries.
- In a small bowl, whisk together the mustard, orange juice, vinegar and black pepper.
- Pour dressing over the kale mixture and toss well to coat everything.
- Serve immediately or refrigerate for up to two days.

Hi Martha, Thanks for the great recipe! I had just purchased 2 bunches of dinosaur kale at Whole Foods yesterday and was looking for a nice healthy salad recipe. Unfortunately I did not have orange juice or oranges so I used a cup of diced peaches instead, and I also didn't have the red cabbage so I substituted 4 cups of shredded carrots. And it came out great! The dressing was simply amazing. Next time I'll make sure to have all of the ingredients on hand and make it exactly as you had in your recipe. Love this and will definitely make again!!!
P.S. You may have accidentally swapped out photos. The dinosaur kale picture above looks like some sort of salad green, but definitely not dinosaur kale which is a dark, dark green and looks a bit like, well... a dinasaur's skin. 🙂
