I’ve never made tamales from scratch, and honestly, it’s a project. Between cooking the filling, preparing the masa, and assembling everything, it’s a lot of steps for one meal.
This slow cooker tamale pie takes the flavors of traditional tamales and turns them into a much simpler, lighter casserole. Everything mixes together easily and cooks right in the crock pot, making it a good option for busy days when you want something hearty without spending hours in the kitchen.
It’s not a traditional tamale, but it delivers those familiar flavors in an easy, everyday way.

Ingredients & Substitutions
- Cornmeal – Fine or medium-grind cornmeal works best here. Avoid coarse or stone-ground cornmeal, which can stay gritty. Masa harina is not the same as cornmeal and won’t give the same result in this recipe.
- Milk – Fat-free milk keeps the recipe lighter. Unsweetened almond milk or another plain, unsweetened dairy-free milk also works.
- Egg – Helps bind the casserole and give it structure.
- Lean ground beef – Keeps the dish filling without being heavy. Lean ground turkey works just as well.
- Dry chili seasoning mix – Reduced-sodium mixes work well. You can also use a homemade chili seasoning if you prefer.
- Canned diced tomatoes with green chilies – Use mild, original, or hot depending on your taste. Fire-roasted varieties add a little extra flavor.
- Corn – Canned corn (drained) or frozen corn both work. If using frozen corn, there’s no need to thaw it first.
- Reduced-fat shredded Mexican-style cheese – Used for topping. Cheddar, Monterey Jack, or a blend you like also works.
- Optional Garnishes – Chopped cilantro, light sour cream or plain Greek yogurt, salsa, guacamole, chopped tomatoes, shredded lettuce, sliced black olives.

How to Make Tamale Pie Casserole Step by Step
Step 1: Gather and prepare all ingredients.

Step 2: In a medium mixing bowl, combine the cornmeal, milk and egg.

Step 3: Stir in the prepared meat, chili seasoning, tomatoes and corn until thoroughly mixed. Pour mixture into crock pot.

Step 4: Cover and cook on HIGH for 1 hour. Set slow cooker on LOW and continue to cook for 3 hours. Alternatively you can pour the mixture into a greased baking dish bake in the oven at 350 degrees for approximately 45 minutes.
Step 5: Remove lid and wipe and wipe off any condensation, then sprinkle cheese over tamale pie. Place cover on cooker and cook an additional 5 minutes, or until cheese is melted.

Step 6: Serve warm, sprinkled with chopped cilantro, or additional toppings (if desired).

Recipe Notes
- Canned diced tomatoes with green chilies come in a wide range of heat levels. Choose what works best for you.
- Wiping condensation from the lid before adding cheese helps prevent excess moisture.
- This recipe doubles easily if you’re cooking for a crowd or want extra leftovers.

- 1-1/2 cups fat-free milk (I used unsweetened almond milk beverage)
- 1 egg, beaten
- 1 pound lean ground beef, browned and drained of excess fat (I used lean ground turkey)
- 1 envelope (1.25 ounces dry chili seasoning mix)
- 1 can (10 ounces) diced tomatoes with green chilies, undrained (I used Rotel), If you use Rotel diced tomatoes, there are lots of options. Location may determine availability. Choose the flavor and spice level you like best.
- 1 can (16 ounces) corn, rinsed and drained
- 1 cup reduced-fat shredded Mexican cheese blend
Additional Garnishes:
- chopped cilantro, light sour cream, salsa, guacamole, chopped tomatoes, shredded lettuce, sliced black olives, etc.

It serves 8 – how much is a serving, a cup?
I have this in the slow cooker right now. I am using 1lb extra lean ground Turkey and Velveeta Shreds Mexican Cheese (couldnโt find regular LF Mexican blend).
Other than that I used all other ingredients as listed. I built the recipe in the recipe builder and mine came out 8 servings at 2 points each or 6 servings for 3 points each. I am just going to divide the pot into 6 even sections. In my family I think it will be 6 servings but weโll see and I think 1 serving will be one large cup.
Hi Karen, A serving is 1/8th of the recipe. Since it sets up like a pie, I would just divide it into 8 equal pieces and scoop out 1 of them for a serving. Hope this helps. ~Martha

Would I be able to cook on low for 6 hours or something? I would put this on then leave for work so I wouldn’t be home after an hour to change the temperature. Thanks!!

I used a 6-Quart. 4-Quart or larger should work fine.
