(30 Days of Juicing Day #24 – Summer Gazpacho Juice)

I really love cold gazpacho soup, so when I noticed this recipe for Summer Gazpacho Juice on Reboot with Joe, I knew I’d be making it.

I did some tinkering with the original recipe and think it tastes pretty good – but I definitely want to do some more experimenting with different ingredients.

There’s lots you can do to easily change up the flavor of this gazpacho juice, like swapping cilantro or basil for the parsley, or using sweetening it up with some watermelon in place of the pear, or adding in a little lemon and/or lime.

The Skinny on Gazpacho Juice

According to my calculations, this recipe for Cold Summer Gazpacho Juice has about 90 calories and 2* Weight Watchers Points Plus.

While not being attractive as some of the other juices we’ve made (like Strawberry Apple Pear Juice, Bright Pink Juice, Ciao Bella Juice, or Sweet Potato Carrot Juice), you’re sure to still get lots of nutrients in the form of vitamin C, potassium, sodium, quercetin, and lutein, just to name a few.

Gazpacho Juice {30 Days of Juicing}

Ingredients 

  • 1 large heirloom tomato
  • 4 stalks celery
  • 1 pear
  • 1/2 cucumber
  • Few sprigs fresh parsley

Instructions 

  • Wash all produce thoroughly. Juice all ingredients and serve over ice.

Notes

Nutritional Estimates Per Serving (about 1-1/4 cups - will vary): 90 calories and 2* Weight Watchers Points Plus. (I only count the calories from the apple and pear to determine points. I am not too concerned about the negligible calories from the celery, cucumber and parsley.)
