(30 Days of Juicing Day #14 – Sweet Potato Carrot Juice)

I was trying to come up with a clever name for this juice, but decided to just keep it simple.

After visiting The Juice Nut’s website where I saw this recipe for Sweet Potato Juice, I came up with my idea for juicing some of my favorite foods – sweet potatoes, carrots, oranges, red bell pepper and celery.

This juice is loaded with beta-carotene and vitamin C, so I’ll have to remember to whip up a batch the next time I feel myself coming down with a cold.

The Skinny on Sweet Potato Carrot Juice

This is one juice that I honestly think I could drink all day long. I love the smooth consistency and it has just the right amount of sweetness for my taste.

According to my calculation, this Sweet Potato Carrot Juice has about 100 calories and 3* Weight Watchers Points Plus.

In my opinion, this juice is best served cold over ice.

Sweet Potato Carrot Juice {30 Days of Juicing}

Ingredients 

  • 1 medium sweet potato
  • 3 medium carrots
  • 1 orange, peeled
  • 1 red bell pepper, cored and seeded
  • 2 stalks celery

Instructions 

  • Wash all produce thoroughly. Cut sweet potato, carrots, orange and red bell pepper into pieces that will fit into juicer (affiliate link). (I did not peel mine first since they were organic.) Juice all ingredients and serve chilled over ice.

Nutritional Estimates Per Serving (1/2 recipe - about 1-1/4 cups): 100 calories and 3* Points Plus. (I only counted the juice from the sweet potato, carrots and orange to determine the nutritional estimates.)

    Would you happen to know how much beta-carotene is in one cup of sweet potato JUICE compared to one cup of carrot juice? Thank you.

    Do we cook the sweet potatoes or not? I find that sweet potatoes taste the best when they are baked (in my opinion, not everyoneโ€™s opinion), my sister prefers her sweet potatoes boiled or cooked in water, because itโ€™s not as sweet to her, and I was told that raw sweet potatoes donโ€™t taste good. So should we cook them first or not?
