Weight Watchers Recipe of the Day: Maine Lobster Rolls

Mom and I attended Feast on the Street Phoenix several weeks back for the sole purpose of experiencing the offerings of the Maine Lobster Lady, a food truck devoted to all things lobster, including Maine Lobster Rolls!

Although there were lots of yummy looking choices, we decided to stick with the basics…

A fried clam roll: Sweet Maine clams, dry breaded by hand and deep fried. Served in a butter grilled split-top hotdog roll with garlic and herb aioli on the side.

And Maine lobster rolls: Succulent Maine lobster chunks, served chilled with just a touch of lemon aioli, each nestled in a butter grilled split top hotdog roll.

Both were beyond delicious and just like you’d get on the coast of Maine. I can’t even begin to tell you how happy this lunch made Mom…

And me too, for that matter. This lunch was a special treat, satisfying, delicious and well worth the expense (in terms of price and WW Points). I enjoyed every morsel, including the chips and glass of blueberry lemonade.

Happy, and satisfied for hours and hours, I kept everything in balance with a nice, light dinner ๐Ÿ™‚

Skinny on Maine Lobster Rolls

As splurges go, lobster is a pretty healthy one. A a cup of steamed lobster meat has just 130 calories, 1.2 g fat and 27.6 g protein.

Most Maine lobster rolls out at restaurants will set you back anywhere from 300 to 500 calories, or about 8 to 14 Points.

To keep the Points under control, you can make a lobster roll yourself at home.

Here’s a yummy recipe for a homemade lobster roll from Weight Watchers New Complete Cookbook (affiliate link) that I adapted slightly to make it just like Mom’s.

Each lobster roll sandwich has about 288 calories and:

7 *SmartPoints (Green plan)
6 *SmartPoints (Blue plan)
6 *SmartPoints (Purple plan)
7 *PointsPlus (Old plan)

Recipe Variations

Crab Rolls
I think I prefer crab rolls to lobster rolls, but don’t tell my mom. To make crab rolls, just substitute a pound of lump crabmeat (being sure to remove all the bits of cartilage first) for the lobster meat.

Lobster Salad
Save the bun calories and enjoy your lobster salad on a bed of greens.

Maine Lobster Rolls

Traditional Maine lobster rolls, easy, healthy and oh, so delicious made lighter with reduced fat mayonnaise and a toasted (unbuttered) bun.

Ingredients 

  • 1 pound cooked lobster meat, coarsely chopped
  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup finely diced celery
  • Salt and freshly ground pepper, to taste
  • 2 tablespoons fresh lemon juice
  • Pinch of cayenne pepper (if desired)
  • 4 top-split hot dog buns, toasted
  • Shredded lettuce (if desired)
  • Paprika, for sprinkling on top (if desired)

Instructions 

  • In a medium bowl, mix together the lobster meat, celery, salt, pepper and lemon juice, and cayenne (if using) until well blended.
  • Place a little shredded lettuce in each of the four toasted buns, if desired. Divide the lobster salad mixture evenly on top of the lettuce. Sprinkle with paprika, if desired. Serve immediately.

Notes
