In a medium bowl, mix together the lobster meat, celery, salt, pepper and lemon juice, and cayenne (if using) until well blended.
Place a little shredded lettuce in each of the four toasted buns, if desired. Divide the lobster salad mixture evenly on top of the lettuce. Sprinkle with paprika, if desired. Serve immediately.

Crab Roll Variation
I think I prefer crab rolls to lobster rolls, but don't tell my mom. To make crab rolls, just substitute a pound of lump crabmeat (being sure to remove all the bits of cartilage first) for the lobster meat.Lobster Salad Variation
