Weight Watchers Recipe of the Day: 2-Ingredient Slow Cooker Moroccan Chicken

I had the family over for dinner Friday night. There were nine of us... 8 adults and 1 munchkin.
For the first time in decades we all live close enough to gather for dinner without traveling great distances across several time zones.
How wonderful is that?
I wanted to make a nice meal with minimal effort so I could enjoy the party too.
So, I decided to break out a package of Campbell's Moroccan Spiced Stew with Green Olives and Lemon Slow Cooker Sauce and pour it over a bunch of boneless, skinless chicken thighs
Then crossed my fingers that this super easy Slow Cooker Moroccan Chicken would be edible.
The Skinny on Slow Cooker Moroccan Chicken
Talk about a recipe that's really hard to screw up. All you do is put the chicken in the slow cooker, pour the sauce over the chicken, cover and cook on LOW for 6 to 7 hours. That's it.
The package says to use chicken breasts, but I think chicken thighs turn out more moist and tender, so I opted for them instead.
I served this easy slow cooker Moroccan chicken with couscous, roasted asparagus and a simple grated carrot salad.
How did it turn out?
Everyone raved 🙂 Well, all the adults raved.
My 3-year-old grandson preferred the couscous, clearly expressing his disapproval when I ran out of it before he'd had his fill!
The chicken was moist, tender and flavorful with lots of warm spices, sliced green olives, cilantro and lemon.
I sprinkled it with parsley to dress it up a bit and had a squeeze of fresh lemon handy to brighten it up, but didn't have to use it.
According to my calculations, each serving has about 265 calories and

It was simply delicious, proving once again that sometimes the easiest meals are the best ones.
I will definitely be making this again!
I recently spotted the sauce at my 99 Cents store, so I'm planning to stock up now that I know how much we like it.

Slow Cooker Moroccan Chicken Recipe Variations:
Bulk this up with additional vegetables. I think chopped carrots, onions, and cauliflower florets would all work, as would a can of drained garbanzo beans.
If you feel it needs a little "something" and you are not sure what, try a little fresh squeezed lemon juice just before serving.

Easy Slow Cooker Moroccan Chicken Recipe
Ingredients
- 3 pounds boneless skinless chicken thighs
- 1 pouch (13 ounces) Campbell's Moroccan Stew Slow Cooker Sauce
- Fresh chopped parsley for garnish (if desired)
Instructions
- Ideal Slow Cooker Size: 6-Quart.
- Place chicken in slow cooker.
- Pour Campbell's Slow Cooker sauce over the chicken.
- Cover and cook on LOW for 6-7 hours - until chicken is cooked through to an internal temperature of 165F (using a meat or instant-read thermometer (affiliate link)).
- Serve sprinkled with fresh chopped parsley, if desired

this looks good. i was wondering how those campbell's cooker sauces were.
i have trouble with chicken (even thighs) getting dry if cooked for this long
(even on LOW). does it have something to do with how full the pot is
with everything added? i think crockpots now days get hotter to prevent
food borne illness. maybe i need to get an old style name brand CROCKPOT.
no rating as i haven't made it yet. thank you for review.

The recipe look good, but the Campbells slow cooker package is not yet available in the stores where I live. I like the rest of your menu and will try the whole meal when the item is available.

This stuff is actually very good especially for sauce that comes in a packet. I have used it on both the LOW and HIGH crock pot settings with good results. Chicken comes out tender either way and is quite tasty. I did not find it too spicy unlike the one review....

We absolutely love this moroccan spiced stew!!! In fact, the stores that are close by carried them and they were always selling out fast. In the past two months I've been searching everywhere for them. I'm not sure if my local Walmart just stopped carrying them or what? So i never gave up on looking for the moroccan stew packets. Recently i went to my local Meijer and tadaaaa... They had them! I grabbed all the packets off the shelf. I bought every one of them. (5) even if they had 15 packets, I'd but every single packet!! This has such wonderful flavor. Just enough spice that is not over powering. And most of all, it's a super easy dish that we absolutely love and look forward to every time. I love to pair it with long grain rice. (Similar to Chipotle) i throw the rice into my rice cooker with a little bit of coconut oil. After its done, I put it in a separate bowl. I juice one to two limes. (Depending on how much juice i get out of it) add the line juice and salt and mix. Then chop your cilantro. Add and mix. We just love this dish!!!
