I’m a big fan of healthy breakfast cookies - wholesome, less sweet cookies full of healthy ingredients you can feel good about eating at breakfast or for a snack.
Here’s my latest experiment – breakfast cookies made with rolled oats, applesauce, maple syrup, and Grape-Nuts cereal. They are a soft, chewy cookie that’s just slightly sweet. They’re actually more like a chewy muffin top than a full-fledged cookie, but delicious and a lot more nutritious nonetheless.
I added a little maple extract, in addition to the maple syrup ,to make the maple flavor a little more pronounced. They reminded me a lot of the old-fashioned Maypo muffins I loved as a kid. But, they’re definitely not the best breakfast cookies I’ve ever tasted. I think they needed a “little something” so next time I’m going to add a little cinnamon and a handful of Craisins.
- ¼ cup butter, melted
- ½ cup firmly packed dark brown sugar
- 2 tablespoons maple syrup
- 2 tablespoons unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla or ½ teaspoon maple extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup rolled oats (old-fashioned or quick-cooking)
- ½ cup all-purpose flour
- ½ cup Grape-Nuts cereal
- Adjust an oven rack to the center position and preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper or lightly grease them.
- In a mixing bowl beat together the butter and brown sugar with an electric mixer on medium speed until smooth. Add the maple syrup, applesauce, egg, and vanilla or maple extract, and beat until well blended.
- Add the baking soda, salt, rolled oats, flour, and Grape-Nuts and stir just until combined.
- Arrange the dough by heaping teaspoonfuls spaced 2 inches apart onto the prepared cookie sheets. Press down the cookies slightly with floured or dampened fingers.
- Bake, one cookie sheet at a time in the center of the oven until lightly golden brown, 10 to 14 minutes.
- Remove from the oven and cool on the cookie sheets for 2 to 3 minutes and then transfer the cookies to wire racks to cool completely.
