I love the fake potato salad using cauliflower instead of potatoes…. SOOOO good and sooooo tasty….sure satisfies my potato salad cravings and uses my favorite vegetable besides!
My favorite salad is a mixed green salad with grilled chicken! It is my go-to salad! My favorite vegetables are fresh green beans, tomatoes, and sweet corn!

My favorite veggie is butternut squash. It’s such a versatile vegetable. I love toasting the seeds- they taste much like pumpkin seeds! Butternut squash is delicious roasted in the over or cooked on the stovetop. It makes a delicious and creamy soup. It’s a great addition to many one pot dinners. I love that it doesnt need refrigerated until after it’s cut. I have mine sitting on the counter in a metal basket with other veggies. They all look so pretty!
Lettuce, tomatoes, cottage cheese and bacon bits are the best!!
I love sauted zucchini and squash.
