I made chicken enchilada soup this weekend!
Made the EASIEST butternut squash I ever cooked! They are like cutting cement when raw so — I just washed it, sprayed the inside of the crock, poked a few holes in it, and cooked it whole, on high for 6 hours. Refrigerated it overnight for ease of handling, cut in half, removed the seeds and scooped out all that delicious squash to be microwaved to warm it. SUPER easy and scrumptious! And, ZERO Freestyle points on WW! Spaghetti squash and acorn work great this way also. (Could bake them whole as well but my crockpot doesn’t heat up the kitchen like the oven!
I made Pesto Vegetable Soup~a hack of Panera’s. Absolutely wonderful!
I made Sandra Lee’s stuffed peppers in my “certainly not beautiful old crockpot” last..I want yours..I want yours!?
The last thing I made in my crockpot was Cream Cheese Chicken. The recipe calls for 3 lbs. cut up pieces of chicken, 1 pkg Italian salad dressing mix, 4 tbsp. butter, 1 small onion chopped , 1 can cream of chicken soup, and 1/2 cup chicken broth. Cooked on low for 5 hrs. Served over egg noodles. It was an easy recipe to make, great tasting. Delicious!!
I love my cockpot. It helps tenderize less expensive cuts of meat. Brings out flavor. And it is safe to leave unattended on low settings. Great for a working Mom.
