For those of you put off by the large size of this slow cooker – don’t be.
Here’s an amazing workaround when you want to cook a smaller amount: Just put the recipe ingredients into a smaller oven-safe dish and place the dish inside the bowl of the slow cooker. Cover with the lid and cook as directed! How great is that???

Chicken Tacos
I made chicken breasts topped with cream cheese and salsa. When the chicken was done cooking, I shredded the chicken and mixed the salsa and cream cheese all together. I served it by scooping it into a lettuce leaf; or a low carb tortilla could be used also. Delicious!!
