WW Recipe of the Day: 4-Ingredient No-Bake Samoas Cookies

Do you have a favorite Girl Scout cookie? For me, it’s a toss up between Thin Mints and Samoas, but I haven’t indulged in a Girl Scout Samoas Cookie in years.

Recently I stumbled on these super-simple Samoas copycat cookies with only 4 ingredients by Brittany over at EatingBirdFood.com.

One of my favorite after dinner treats is a coconut date roll which I can buy at my local Sprouts Farmers Market supermarket. So when I saw these simple homemade cookies, which are essentially my coconut date roll with a little chocolate added, I just had to try them.

I’m glad I did because they were fun to make and I quickly fell in love the textures, flavors and simplicity of the recipe from start to finish.

How to Make Copycat No-Bake Samoas

Step 1: Gather and prepare all ingredients.

Step 2: Line a small rimmed pan with parchment paper and set aside.

Step 3: Toast your coconut by pre-heating your oven to 400F degrees. Place coconut on a rimmed baking dish and toast until golden, about 5-10 minutes. Alternatively, add your shredded coconut to a skillet and heat over medium heat until golden brown.

Step 4: Process the dates and toasted coconut in a food processor (affiliate link)

until formed into a sticky dough.

Step 5: Using 1 heaping tablespoon of dough, roll into balls using the palms of your hands, then flatten and shape into thick discs.

Place flattened cookies on prepared rimmed pan.

Step 6: Using the end of a small spoon, end of a chopstick or a straw, poke holes in the center of cookies and reshape into discs, as necessary.

Step 7: Place the pan in the freezer, allowing cookies to firm up.

Step 8: Add chocolate chips and coconut oil to small microwave-safe bowl. Microwave (affiliate link) in 15 second increments until chocolate is melted, being sure to stir in between to help prevent the chocolate from burning.

Step 9: Remove cookie pan from freezer and dip bottoms of cookies in melted chocolate, then place them back on the parchment.

Step 10: Once all cookies have been dipped, add remaining chocolate to small plastic baggy and snip off one small corner of baggy. Drizzle remaining chocolate over tops of cookies.

Step 11: Return baking pan with cookies to freezer until chocolate hardens.

Step 12: Store cookies in an airtight container (separated by a layer of wax or parchment paper, if necessary, to prevent sticking) in the refrigerator.

Recipe Notes

If your Medjool dates are fresh, you just need to remove the pits. If they are older and a little dried out, you can soak them in warm water for a few minutes to soften them up. Be sure to drain completely and blot with a paper towel to remove any excess water.

My dates were on the large side, so it took about 10 for me to get one cup. If your dates are smaller, you may need a few more to equal one cup.

To keep these cookies gluten-free and vegan, use Enjoy Life chocolate chips.

Copycat No-Bake Samoas Cookies

I prefer the taste and texture of the cookies after they’ve been removed from the fridge and kept at room temperature for a few minutes.

Serving Suggestions

  • Chop up a cookie and sprinkle over your favorite low-fat vanilla frozen yogurt, or banana “nice cream,” for a mini Samoa sundae.
  • Sprinkle a chopped cookie and mix in with plain non-fat Greek yogurt and add a few of your favorite berries for a simple parfait.
