(30 Days of Juicing Day #30 – Homemade V8 Juice)

Before juicing became the celebrated trend that it is today, there was V8® juice. Probably the first really popular, and mass-consumed, juice made with vegetables.

V8 was appropriately named because the original recipe consists of the juice from 8 vegetables, namely: tomatoes, beets, carrots, celery, lettuce, watercress, spinach and parsley.

According to Wikipedia, “tomato juice comprises around 89% of the total drink.”

Campbell’s now produces around 20 different varieties of V8 Juice, including V-Fusion® Juice, V8 Splash®, flavors with high fiber and flavors with low sodium. No doubt with lots of additives and preservatives too!

Around the web you can find lots of different approaches to making your own V8 Juice at home, including blending, cooking and canning. But since this our JuiceFest, I am only interested in freshly made V8 juice that is made with a juicer (affiliate link).

The Skinny on Homemade V8 Juice

My V8 juice is not nearly as “tomato red” as the store-bought version. It’s closer to being beet red in color and tastes great.

According to my calculations, this version of homemade V8 juice contains about 60 calories and 2* Weight Watchers Points Plus. (I’m only counting the juice from the tomatoes, carrots, red pepper and beet to determine calories and points. I’m not too concerned about the negligible calories from the spinach, watercress, parsley and celery.)

Homemade V8 Juicer Recipe {30 Days of Juicing}

Ingredients 

  • 2 large tomatoes, I used Heirloom
  • 1 beet
  • 1 red bell pepper
  • 4 carrots
  • 4 celery stalks
  • 1/2 bunch spinach
  • 1/2 small bunch watercress
  • 1/2 small bunch parsley

Instructions 

  • Wash all produce thoroughly and chop into pieces that will fit into your juicer. Juice all ingredients and serve over ice.

Nutritional Estimates Per Serving (about 1 cup): 60 calories and 2* WW Points+
This recipe made a lot of juice (a little more than 32 ounces) with my Omega Juicer (affiliate link). Juice amounts will vary based on produce variations and type of juicer used.
