I find great Joy preparing a Breakfast Casserole to take to a Young Girls Mentoring Program I am a part of . I am able to take a warm, delicious and healthy breakfast to share! They get excited each time I bring it! Sometimes, I switch up and make a Breakfast French Toast Casserole! Yum! Yum!!

My favorite casserole/dish for a 9 x 13 pan is eggs, basil, brown mustard and milk …all scrambled together and cooked to make “patties” for my light english muffins.
