Being an educator, we love all kinds of casseroles because it is one pan yumminess and filling. One of my family’s favorites is chicken casserole with sour cream, cream of chicken soup and ritz crackers. Because we are attempting to eat healthier in our house I substitute plain Greek yogurt for sour cream and lower sodium soup and crackers.
