WW Recipe of the Day: Easy Healthy Microwave Mug Flax Muffin
As soon as I saw this recipe in Stephanie’s 2, 4, 6, Eat: Intermittent Fasting Simplified (affiliate link) I knew I wanted to try it. Simple and delicious. All you need is 4 ingredients, a mug and a microwave (affiliate link). So easy! A healthy, tasty, satisfying way to begin or day or end your fast!

How to Make Microwave Flaxseed Meal Muffin
Step 1: Gather and prepare all ingredients – ground flaxseed meal, plain nonfat greek yogurt, egg and sweetener of choice. I used honey but a non-calorie sweetener will save you calories and WW points.

Step 2: Stir together the ingredients until well blended. Pour into a large microwave safe mug that has been coated with nonstick cooking spray.

Step 3: Microwave on High Power for 1 minute. Check for doneness. If it isn’t completely cooked, continue to cook for 15 seconds at a time until done. (Microwaves vary in power so exact cooking time may be different.)

Step 4: Allow your muffin to cool in the mug. Enjoy from the mug or remove and place on small plate.
Recipe Notes, Substitutions and Variations
You can play with this recipe. Stephanie used 1 tablespoon of butter. I substituted 1 tablespoon nonfat plain Greek yogurt with good results saving several calories and points. I also used honey since I’m in maintenance mode but opting for a non-calorie sweetener will save you calories and WW Points.
- Add a bit of spice such as 1/8 to 1/4 teaspoon cinnamon, 5 spice blend, nutmeg, cardamom, etc.
- A little fresh or dried fruit would be nice too: raisins, Craisins, blueberries, chopped apple, chopped peach, mango etc. Next time I might try 1 tablespoon of unsweetened applesauce instead of the yogurt.
- Make this muffin in advance: after cooking muffin, cool slightly and remove from the mug. Allow to thoroughly cool and then wrap tightly with plastic wrap or store in an airtight container. Will keep 1 day at room temperature or 2 days in the refrigerator. Can be enjoyed later at room temperature or re-heated in microwave for a few seconds.
- Try a different sweetener: substitute an equal amount of honey, agave, or maple syrup for the sugar.
- Add 1/4 teaspoon of vanilla extract.
What Should I Serve with this Flax Muffin?
Enjoy this muffin “as is” (be warned, it’s really good), or topped with a dollop of plain Greek yogurt and a few fresh berries, if desired.
