WW Recipe of the Day: Low Point Green Chile Chicken Soup

One of the advantages of living in the woods of northern Wisconsin is a much longer soup season. For a soup lover like me this is a very good thing! So today I’m excited to share this recipe for a quick and easy green chile chicken soup. As soon as I ran across it in Bobby Deen’s Everyday Eats (affiliate link) I’ve been anxious to try it.

This version green chile stew, the classic one-pot meal, comes together in less than 30 minutes and has about half the usual amount of calories. It’s the perfect dish to serve on a cold night when you want the comfort of a hearty bowl of belly warming soup. Everyone who tried, this hearty soup gave it high ratings! I think you will too.

  • Spicier: add 1-2 chopped jalapeno peppers and/or cayenne pepper
  • No Chicken: substitute lean ground turkey or pork, or chopped chicken breast

Ingredients 

  • 1 teaspoon olive oil
  • 1 large onion, finely chopped
  • 1 large green bell pepper, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 pound lean ground chicken
  • 1 tablespoon chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, plus more to taste
  • 8 ounces canned chopped green chiles
  • 1 can (14 – 15 ounces) corn kernels, drained
  • 2 cans (14 to 15 ounces) white beans, rinsed and drained
  • 4 cups low sodium chicken broth
  • 1/2 cup chopped fresh cilantro, plus more for serving
  • lime wedges, for serving, if desired
  • toppings such as corn chips, shredded cheese, sour cream, etc., if desired

Instructions 

  • In a large pot, heat the oil over medium-high heat. Add the onion, green pepper, garlic, ground chicken, and spices. Cook, breaking up the chicken with a wooden spoon (affiliate link), until it is no longer pink, 8 – 10 minutes.
  • Add the canned chiles, corn, beans and broth and bring to a gentle boil. Lower the heat and simmer for 10 minutes.
  • Stir in the cilantro. Taste and add more salt if you think it needs it.
  • Serve with desired toppings.
