I’ve gathered a few of my favorite easy healthy shrimp recipes here including an easy healthy shrimp & spinach stir-fry, healthy garlicky shrimp & spinach as well as a delicious recipe for healthy garlic basil shrimp, to provide you with some quick and easy dinner ideas.

(I find that coming up with easy dinner ideas is half the battle.  Once you know which quick easy dinner recipe you’re going to make, it all gets a lot easier!)

Back when I was growing up, shrimp was a luxury that we indulged in only on special occasions and during the holidays. Now, I often eat it several times a month. And I’m not alone…

Did you know that shrimp is currently the most consumed seafood in he United States? It’s also high in protein and low in fat and calories, making it a great healthy dinner option.

The key to healthy shrimp recipes, is steering clear of preparations that involve deep fat frying and/or heavy sauces, which is really easy to do. While I used to look forward to a platter of golden fried shrimp and french fries, these days I prefer my shrimp recipes healthy and light.


Healthy Shrimp and Spinach Stir Fry Recipe

Quick easy shrimp recipes for dinner don’t get much quicker or easier than this. The fact that it’s a tasty healthy shrimp recipe is an added bonus. I adore the flavor of tarragon with shrimp, but if you don’t, you could always substitute basil or another herb or your choice or just leave it out.

Prep Time: 10 minutes
Cook Time: 5 minutes
Yield: 4 servings

Ingredients

1 tablespoon olive oil or vegetable oil
1 pound uncooked peeled deveined shrimp, thawed if frozen
4 cups lightly packed baby spinach leaves
1 can (14 ounces) baby corn nuggets, drained
1/2 cup chopped drained roasted red bell peppers
1/2 teaspoon dried tarragon leaves
1/2 teaspoon garlic salt
Lemon wedges for serving

Directions

Heat a 12-inch skilled over medium high heat. Add the oil and swirl around to coat the bottom of the pan. Add the shrimp and cook, stirring constantly, until the shrimp are pink and firm, 2 to 3 minutes. Add the spinach, baby corn, bell peppers, tarragon and garlic salt and cook, stirring continuously until the spinach is wilted, about 3 minutes. Serve with lemon wedges.


Healthy Garlic Shrimp & Spinach Recipe

A tasty quick easy dinner ready in 20 minutes or less is what you get with this healthy shrimp recipe. This spicy combination is also great over pasta or rice.

Prep Time: 10 minutes
Cook Time: 10 minutes
Yield: 4 servings

Ingredients

1 tablespoon olive oil
4 cloves garlic, thinly sliced
1 small red chile, seeded and thinly sliced
Salt and pepper to taste
1 pound uncooked medium shrimp, peeled and deveined, tail shells removed
1/2 cup dry white wine
5 cups washed baby spinach leaves
4 thick slices, Italian or French bread toasted

Preparation

Heat the oil in a large skillet (affiliate link) over medium heat.  Add the garlic, chile and 1/4 teaspoon each salt and pepper, and cook, stirring often, until fragrant, about 2 minutes.

Add the shrimp and cook for 2 minutes. Turn the shrimp over, add the wine and bring to a boil. Reduce the heat and simmer until the shrimp are pink, about 3 minutes. Add the spinach and cook, stirring, until it begins to wilt, about 2 minutes.

Serve over the toasted bread.


Healthy Garlic Basil Shrimp Recipe

This is a simple healthy shrimp and pasta recipe with just a few ingredients that stirs tougher quick and tastes divine. It requires very little chopping and literally takes about 6 minutes to cook. (The key is to get uncooked shrimp that have already been peeled and deveined.) How’s that for a quick dinner idea?

Prep Time: 10 minutes
Cook Time: 5 minutes
Yield: 4 servings

Ingredients

2 cups orzo or other small pasta, preferably whole wheat
2 tablespoons olive oil
1-1/4 pounds uncooked peeled deveined large shrimp
3 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes, or more to taste
3/4 cup dry white wine or vegetable broth (affiliate link)
1-1/2 cups grape tomatoes, cut in half
1/4 up finely chopped fresh basil
Salt and freshly ground black pepper, to taste

Preparation

Cook and then drain the orzo or pasta of your choice according to the package directions.

While the water is boiling and pasta is cooking, prepare the shrimp. Heat the oil in a large 12-inch skilled over medium-high heat until the oil is glistening, but not smoking. Add the shrimp, turning over over once, until they are pink and firm, 2 to 3 minutes. Transfer the shrimp with a slotted spoon to a large bowl and set it aside.

Add the garlic and red pepper flakes to the oil remaining in the skillet and cook until fragrant, about 30 seconds. Add the wine and cook over high heat, stirring occasionally, for 3 minutes. Stir in the tomatoes and basil and season the sauce to taste with salt and pepper. Return the shrimp to the pan and cook just until heated through, 1 to 2 minutes. Taste and adjust the seasonings and serve over the pasta.
