Hi Patricia,
I don’t do a lot of candy making but would check in with two of my favorite kitchen supply stores here in Phoenix - Kitchen Classics at 40th Street/Thomas and Sweet Basil Gourmet at Scottsdale Road and Shea Boulevard. A good online resource for quality chocolate disks for melting/molding is http://www.kitchenkrafts.com

Hi Tamara,
I can teach you how to make basic breads and pasta and simple pastries, but I have not yet perfected laminated dough used for croissants, danish, etc. I am in Wisconsin until October. Send me an email -marthamckinno[at]mac[dot]com if you are interested. I have several more questions for you.
Warmly,
Martha
