I probably should be posting a pumpkin recipe for you today, like the yummy smelling turkey, pumpkin and black bean chili that's simmering away in the crock pot as I type this.
Instead, I've got cranberry orange slow cooker beets—an easy and delicious way to jazz up cooked beets.

I'm trying to use my slow cooker to make more vegetables and side dishes, so I don't get stuck in a soup and stew rut during my year of Weight Watchers friendly crock pot cooking.
Looking for something to serve with leftover slow chicken and gravy, I scrounged around and found in the fridge a package of cooked beets that Mom had given me sometime ago.

I came up with this recipe for cranberry orange slow cooker beets by mixing and matching a couple of different recipes.
We both liked these cranberry orange slow cooker beets a lot. They would make a nice side dish with roast chicken, turkey or pork too.

Cranberry Orange Slow Cooker Beets Recipe
Ingredients
- 1 pound cooked beets, quartered (I used Melissa's peeled and steamed beets from Costco)
- ⅛ teaspoon ground nutmeg
- 1 tablespoon sugar
- 2 teaspoons cornstarch
- ½ cup cranberry juice
- 2 teaspoons olive oil
- ½ teaspoon finely shredded orange zest (optional)
Instructions
- Ideal slow cooker size: 1-½-Quart.
- Place the beets in the slow cooker. Sprinkle with the nutmeg.
- In a small bowl, mix together the sugar and cornstarch. Stir in the cranberry juice and whisk until smooth. Stir in the olive oil.
- Pour the cranberry juice mixture over the beets. Stir to coat.
- Cover and cook on HIGH 1 hour, until the beets are heated through and the sauce has thickened.
- Keep warm until ready to serve.
