I'm a big fan of healthy breakfast cookies - wholesome, less sweet cookies full of healthy ingredients you can feel good about eating at breakfast or for a snack.
Here's my latest experiment - breakfast cookies made with rolled oats, applesauce, maple syrup, and Grape-Nuts cereal. They are a soft, chewy cookie that's just slightly sweet. They're actually more like a chewy muffin top than a full-fledged cookie, but delicious and a lot more nutritious nonetheless.
I added a little maple extract, in addition to the maple syrup ,to make the maple flavor a little more pronounced. They reminded me a lot of the old-fashioned Maypo muffins I loved as a kid. But, they're definitely not the best breakfast cookies I've ever tasted. I think they needed a "little something" so next time I'm going to add a little cinnamon and a handful of Craisins.
Enjoy!
